Football season is big around here,
and even though this year our gatherings will be very small and safe,
we are still going to enjoy football food and cheer for our favorite teams!
A big game for our family is coming up this weekend,
Alabama vs Ole Miss
DD went to Ole Miss and HHjr went to Alabama
A friendly family rivalry!
HHjr was on a Cub scout camping trip with Big E
during the first game of the season,
and without our King of the Grill, guess what I did?
I ordered food from our favorite BBQ restaurant {Martin’s}
through Door Dash!
I ordered ribs, pulled pork, macaroni & cheese,
hush puppies, coleslaw and broccoli salad and we had a feast!
I set up a slow cooker buffet
A frozen spinach and artichoke dip {TGI Fridays}
went in the mini crock pot, with a bowls of chips, crackers and pretzels
the ribs and pulled pork stayed warm in the large crock pot,
and macaroni and cheese stayed hot in the mid sized one
I put buns on the platter and set out the salads
and we were all set!

Last weekend HHjr was on the coast doing hurricane clean up
so DD offered to bring homemade pizzas
I set up the buffet with pizza peels for the pizzas,
a tray with simple snacks
and a cheese board for salami, cheese and fruit
Nothing fancy just easy and very kid friendly
I did make some tasty Butterscotch Cashew Cookie Bars for dessert
Only 4 ingredients,
these cookies can be whipped up in no time!
The base is crescent roll dough that you bake for 5 minutes
After 5 minutes in the oven, load it up with butterscotch chips
{a few stray white chocolate chips hopped in there too}
Then add cashews and pour the sweetened condensed milk over all
After baking and cooling, cut into squares and enjoy
Butterscotch Cashew Bars
Equipment
- parchment paper
- 9' x 13" baking pan
Ingredients
- 1 can crescent roll dough {8}
- 1 1/2 cups roasted and salted cashews
- 1 can 14 oz sweetened condensed milk
- 2 cups butterscotch chips
Instructions
- Preheat oven to 375 degrees
- Spray a glass 9" x 13" baking dish with cooking oil spray and place a large piece of parchment paper on the bottom and press it onto the sides and bottom where the spray with hold it in place
- Un roll dough and place it into the bottom of the dish on the parchment paper, stretching to fit and pinching perforations together to seal. Poke it with tines of a fork all over.
- Cook dough for 5 minutes and remove from oven
- Top partially baked crust with butterscotch chips and cashews. Slowly pour milk over all, letting it seep into all the nooks and cranies
- Return to oven and bake for 25-30 minutes or until it is cooked through and golden
- Cool dish on a wire rack for 1 hour. Remove from dish by carefully lifting the baked cookies with opposite ends of the parchment paper. Continue to let cookies cool and set or place in the refrigerator to speed up cooling time
- Cut into bars or squares and store in a covered container at room temperature
