Recipe Box, Autumn Apple Cheddar Soup

Aren’t apples one of the best symbols of Fall?

And when you think of the ultimate comfort food,

a bowl of hot soup and a sandwich has to come to mind…

The other night HHjr whipped up a pot of Apple Cheddar Soup

and served it with Bacon Grilled Cheese Sandwiches

Yes, it was a cheese overload, but it was so good!

The soup is made with apples, potatoes, onions, chicken broth

cheddar cheese and unsweetened apple juice

Saute the apples, onions and potatoes until the apples are soft,

about 8 minutes

Add broth and apple juice

Simmer for 10-12 minutes

Use an immersion blender and puree the soup

Add 1 1/2 cups of the cheese and stir until it melts

Season with salt and pepper to taste

Garnish with reserved cheese and crispy bacon

Autumn Apple Cheddar Soup

Ingredients

  • 1 small onion chopped
  • 1 T butter
  • 1 T olive oil
  • 2 medium apples peeled and chopped
  • 1 medium potato peeled and chopped
  • 3 cups low-sodium chicken broth
  • 1 1/2 cups unsweetened apple juice
  • Kosher salt and freshly ground pepper
  • 2 cups shredded extra-sharp cheddar cheese divided
  • Melt butter with olive oil in a skillet over medium high heat
  • crispy bacon bits for garnish

Instructions

  • Add the onion, apples and potato and cook, stirring frequently, until the apples are soft, about 8 minutes.
  • Add the chicken broth, apple juice, salt,and pepper to taste. Bring to a simmer and cook until the potato is soft, 10 to 12 minutes.
  • Puree soup with an immersion blender*
  • Stir in 1 1/2 cups of cheese, reserving the rest for garnish
  • When cheese is melted and soup is heated through, ladle into bowls and garnish with reserved cheese and bacon bits

Notes

*Or puree in a blender, but remember that hot soup will overflow if you put to much into the blender, so do this in batches
