The batter and icing are both flavored with Baileys Irish Cream

The batter smells so wonderful as the aroma

from this cream liqueur drifts around the kitchen

Silicone pans make baking cupcakes so easy

When you bake a cupcake in a paper the paper gets greasy

When you bake in the silicone pan, the cakes just pop right out

and then you can put them in a decorative paper

These cupcake papers were packaged with 2 different prints

If you turn some inside out you can make a pretty lining for your cake paper

Bailey’s Cupcakes

Prep Time 10 mins
Cook Time 20 mins
Buttercream 10 mins
Course Dessert, Snack
Cuisine American, Irish
Servings 5 dozen

Ingredients

Cupcakes

  • 1 box White Cake Mix
  • 1 box instant Vanilla pudding mix
  • 1 cup Bailey’s Irish cream
  • 1/3 cup either half and half or buttermilk
  • 4 eggs
  • 1/3 cup melted butter

Bailey's Buttercream Icing

  • 1/2 cup butter 1 stick, at room temperature
  • 4 cups powdered sugar
  • 4 Tablespoons Bailey’s Irish Cream
  • 2 teaspoons vanilla extract
  • 2-4 T 1/2 n 1/2 or milk until icing is the right spreading consistency

Instructions

Cupcakes

  • Mix dry ingredients together. Beat eggs and add other wet ingredients and combine with dry. Mix on medium speed for 2-3 minutes or until thoroughly combined batter will be thick.
  • Scoop into paper lined cupcake or mini muffin pans. Bake according to Cake mix directions, and check before time is up, 2-5 minutes, testing for doneness with a toothpick. Do not overbake or they will be dry. Makes about 5 dozen mini cupcakes. Ice with Baileys buttercream icing.

Bailey's Buttercream

  • Cream butter and sugar, add Baileys and vanilla. Add milk as needed for proper spreading or piping consistency.
  • This ices about 3 dozen mini cupcakes, double the recipe if desired.

Notes

This makes about 60 mini cupcakes and enough buttercream for 36, so double icing recipe as needed

Jenna, Turning the cupcake liners inside out is one of my favorite tricks. We’re still enjoying our homemade Irish Cream and I know these cupcakes would be especially delicious made with it. ♥

Jenna, oh how I wish I had one of these delicious cupcakes right now. They not only sound yummy, but look pretty, too! Thanks for the baking tip about using a silicone pan then placing the baked cakes in liners. I can’t wait to try that. Happy Monday!

  14. Kitty says:

These little ☘️ Cupcakes look divine, Jenna! I’m thinking a may need one of those silicone cupcake pans. You are so right; the liners do get all greasy and discolored. It’s always a joy to visit you. 💚☘️💚

Jenna, the cupcakes sound divine! I’m a few days behind in my blog reads as I have been busy doing some yard spring clean up and tending to my doggie who has a hot spot on his back leg. 😣 Today is catch up day for some reading as we have high winds and praying you are safe as well, (heard about a bad tornado that hit your state.) I’ve pinned this recipe and your baby carrot cake recipe too! Both sound scumptous! Stay safe! 🛐
