Recipe Box, Rainbow Salad

One of the recipes on my Paint Bucket list this month is

Rainbow Noodle Salad with Almond Ginger Dressing

I think the reason it caught my eye is

that I have made a similar salad and loved it!

The dressing is made with Almond Butter

and you will be whipping this up often!

There’s an old adage “You eat with your eyes first”

and this salad full of a rainbow of colors is instantly pleasing

It is a great way to lighten up your menu

and eat a variety of healthy vegetables, berries and nuts

The salad base is coleslaw mix and fresh spinach

topped with baby carrots, sliced cucumber, chopped sweet peppers,

blueberries, dried cranberries and almonds

You can add grilled or rotisserie chicken to make it heartier if desired

The dressing is made with things you probably have in your pantry

Almond butter, honey, soy sauce {or tamari}

garlic, canola oil, ginger, lemon juice, salt & pepper

Top the salad with Sliced Almonds for a flavorful garnish

Rainbow Salad

A rainbow of healthy vegetables and an almond butter salad dressing makes a tasty meal or side dish. Add cooked chicken to make it heartier if desired.
Prep Time 15 minutes
Course Salad, Side Dish
Cuisine American

Ingredients
  

  • coleslaw mix
  • Purple cabbage, sliced
  • Red peppers, chopped
  • baby carrots
  • Yellow peppers, chopped
  • Cucumber, sliced and quartered or spiralized
  • Baby Spinach leaves, torn
  • Sliced Almonds
  • Blueberries, washed and cleaned
  • Almond Butter Dressing
  • Buttery Almonds garnish

Instructions
 

  • Combine veggies in a bowl and drizzle with dressing
  • Spiralize the cucumber for added interest and sub any ingredient you like, keeping the rainbow in mind. Spiralized pear, carrot, zucchini, yellow squash would be great additions also
  • Dress salad with Almond Butter Dressing and garnish with buttery almonds if desired

Notes

Plan on 1/4 cup per person of each ingredient or adjust according to your needs and preferences
Add cheese, such as bleu, white cheddar, fontina, swiss, or meat, such as cooked chicken, ham, turkey, bacon, if desired

Almond Butter Dressing

Prep Time 10 minutes
Course condiment, Salad
Cuisine American
Servings 1 cup

Ingredients
  

  • 1/2 cup Justin’s Classic Almond Butter
  • 1/4 cup Tamari or Soy Sauce
  • 1 tsp. Ginger paste
  • 1/2 tsp Minced Garlic
  • 1/4 cup lemon juice { juice from 1 lemon}
  • 2 tsp. canola oil
  • 2 Tablespoon honey
  • 3 T water
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 2 T rice vinegar

Instructions
 

  • Combine ingredient in a jar and shake to combine. Stir almond butter into other ingredients, breaking up with a spoon if necessary.
  • You can make the dressing ahead, just let it sit at room temperature before serving

    Colorful and healthy too Jenna! Checking to see to make sure you’re OK after the tornadoes and storms rolling through Alabama overnight. Hope you’re safe and damage free. ♥

    • Thank you Mary, scary day but we were lucky, the damage was north of metro Birmingham, and further south in Selma and Clanton. Schools and businesses closed at noon, so most people were home.
