Take-out Tuesday, Melt in your Mouth Potatoes

Have you heard of melting potatoes?

I have been dying to try them

and the other night HHjr made them for dinner

This recipe has been all over Pinterest for a while,

but it’s so good, I wanted to make sure you knew about it~

and encourage you to try it yourself!

You want to use small russet or Idaho potatoes,

peel them and slice into 1 inch thick rounds

Drop the rounds into a bowl of cold water for 20-30 minutes

This draws out the excess starch so your potatoes will cook better

Drain the potatoes and pat dry

Preheat an cast iron or oven proof skillet over medium high heat

Add olive oil and 4 Tbsp of butter,

When butter has melted into the oil,

place potato rounds in an even layer in skillet

and season with salt and pepper

Cook for 4-5 minutes until golden and flip over and brown the other side

Pour chicken broth into skillet and add garlic

Cut remaining butter into small slices and top potato rounds

Sprinkle with rosemary

Place skillet in a preheated 425 degree oven and cook for 25-30 minutes

until broth is partially absorbed and potatoes are soft and golden

Equipment

  • oven proof skillet

Ingredients
  

  • 4-6 small Russet or Idaho potatoes
  • 8-10 Tbsp unsalted butter
  • 2 Tbsp olive oil
  • 3 cloves garlic minced
  • 1 cup chicken broth
  • 1 tsp chopped fresh rosemary
  • Salt and pepper

Instructions
 

  • Peel potatoes and slice into 1 inch thick rounds.
  • Soak potatoes in cold water for 20-30 minutes. Drain and pat dry.
  • Put olive oil into a preheated ovenproof skillet on medium high. Add 4 Tbsp of butter and stir to melt.
  • Place potatoes in skillet in an even layer and season with salt and pepper. Cook 4-5 minutes or until golden. Turn over and brown the other side.
  • Add chicken broth and garlic to skillet. Top potatoes with remaining butter, cut into small slices. Sprinkle with rosemary
  • Place skillet into a preheated 425 degree oven and bake for 25-30 minutes or until most of the broth has been absorbed and the potatoes are soft in the center. Serve immediately and drizzle remaining liquid over served potatoes if desired.
