Take-out Tuesday, Spinach, Bacon & Artichoke Dip

This classic party dip

gets an update with fresh spinach and crispy bacon

We enjoyed it with cocktails before dinner

at our recent Winter Sparkle Birthday Bash

The Birthday Boy just might have swooned when he first tasted it!

What elevates this dip is not only fresh spinach and crispy bacon,

it also gets a boost using equal parts mayonnaise and sour cream

and a flavorful blend of Italian cheeses

Cook bacon until crispy in a skillet or in the oven

and drain on paper towels and tear into small pieces

Drain the artichoke hearts and give them a rough chop

Place the baby spinach leaves into a large bowl

and cut them into smaller pieces with kitchen scissors

Saute the spinach pieces in a skillet

with 1-2 Tablespoons of bacon fat or olive oil

Once it has cooked down add the minced garlic

and cook 1 more minute,

stirring garlic into the spinach

Add the artichokes to the spinach,

stir in sour cream, mayonnaise and cream cheese,

then stir in the grated Italian blend

Add 1/2 of the bacon pieces,

reserving the rest for topping later

Stir well to combine

Transfer to a greased deep dish 9″ pie dish

At this point the dip can be covered and refrigerated for baking later

Bake dip at 350 degrees for 20-30 minutes or until bubbling,

topping with reserved bacon pieces for the last 2 minutes

Serve with crackers, baguette slices, sturdy chips

or go low carb with crisp romaine lettuce pieces

This dip would also make a killer topping

for a baked potato or pasta!

Delish Jenna, pass that dip my way! Everything’s better with bacon and I would love a healthy dollop on my baked potato. 🙂

  3. Jenna, that is a beautiful appetizer. I agree with Mary, everything is better with bacon. I also love Tillamook cheese. We visited their amazing facility a few years ago. It is a cold start to the day, Happy Tuesday!

This looks so delicious. I’m going to have to give it a try. All the ingredients, especially the artichokes and bacon, are show stoppers. I occasionally will order artichoke dip at a restaurant and am usually disappointed by the small amount of artichokes included. This looks like plenty!

  8. Nancy says:

Now this looks sooooo good! And I agree with Mary… a big spoonful on a baked potato would be sooooo good! I’m pinning this for an appetizer for the Super Bowl!
