Easy Food for Relaxing Summer Weekends

I’m headed south today

to our little slice of paradise on the Alabama Gulf Coast

It is going to be a crazy 10 days,

with a house full of guys and fishing the first weekend

and then thankfully my daughter and her family will arrive

for the rest of next week

and we will have some girl time!

I am not as organized this year as in years past

but I have put together a Pinterest board here for quick ideas,

and every recipe on it is super simple…

I don’t want to spend my first summer week of 2022 in the kitchen!

Here are some tried and true crowd pleasers

for Memorial Day or any summer weekend

Keep breakfast simple with grab and go fruit, yogurt or

Breakfast on a Stick

Snack on this pretty Daisy Dip

It’s simply onion dip and chips from the grocery store

dressed up with snow peas, chopped veggies and bacon bits

Jacuterie is a great way to serve appetizers or a light lunch,

no cooking involved,

just skewering a variety of goodies

and placing in a jar for easy noshing

Hot dogs are hard to beat for a summertime cook out,

and wrap them in bacon with pineapple salsa

and you will be sure to hear raves!

Bacon Wrapped Hot Dogs with Pineapple Salsa

Italian Fries

are coated with butter, oil and seasonings

and baked to crispy perfection in the oven…

a perfect side for hot dogs, burgers, chicken,

steak or pork, anything you’re grilling

Umami Burgers with Vegetable Kebabs

The burgers are seasoned with onion,

basil, Parmesan and teriyaki sauce

Grill a few vegetable skewers along with the burgers

for a yummy lo carb side

How about cooking your whole meal outside like this

Dinner on the Grill

Sweet Orange BBQ Chicken Thighs

are coated with combo of orange marmalade and BBQ sauce

and grilled to juicy perfection for a delightful summer meal

You can make this with chicken breasts too,

but try chicken thighs, they are much more flavorful!

Don’t forget about pizza or flatbread,

everybody loves it and you can put just about anything on it!

Create a Pizza!

You’re going to want some dessert,

cool off with Lazy Lemon Pie in a jar

It’s a breeze to make and serve,

crumbled cookies, lemon curd, and Cool Whip layered in a jar

Triple Chocolate Red White and Blue Cake

is made with a doctored chocolate cake mix, chocolate chips,

and patriotic chocolate peanut M & Ms

Ice Cream Sundae Pie

can be made in advance and kept in the freezer until needed
