Recipe Box, The Chef’s Best!

Happy Father’s Day!
I know people think I do a lot of cooking,
but truth be known I have a resident chef…
We have a multi-generational household and he and I tag team
the cooking and shopping for meals
Sooo…
In honor of my chef son, who is one of the world’s greatest Dads,
I am re-sharing some of his very best culinary creations
and magazine worthy presentations!

Let’s start with
Appetizers!
HHjr is famous for his Asian Firecrackers
Fried wontons stuffed with sausage, cream cheese, green chiles
and served with sweet and sour sauce in a pineapple bowl
Italian Party Bread is made with cut up biscuit dough,
Marinara sauce, and Italian meats and cheeses and baked in a bundt pan
It’s impossible to resist grabbing a bite!
Leftover pulled pork tops cheesy potato skins with BBQ sauce
for amazing Pulled Pork Potato Skins

Instead of batter fried onion rings
try wrapping them in bacon and grilling {or baking} them
Maple Bacon Wrapped Onion Rings

Sides
This Summer Tomato Salad Stack is his knock-off
of a salad from Hot n’ Hot, a famous local restaurant
It is guaranteed to set eyes popping!

potatoes layered with cheeses and cream and baked to golden perfection

Ryan’s Garden Tomato Pie holds some surprises,
under all those cherry tomatoes lies a combination
of summer squash, spinach cheese and prosciutto

Main Dishes
A TrompoKing is a vertical skewer
He loaded the skewer with pork shoulder slices in between
a pineapple top and bottom
and cooked the meat on his Big Green Egg grill,
low and slow,
for the amazing Tacos Al Pastor
Bourbon BBQ Chicken with Grilled Pineapple
A perfect summer meal

BBQ Salmon is cooked with a buttery brown sugar Asian glaze

My favorite recipe of his just might be Scallops with Creamy Bacon Pasta

My son is famous for his pizzas too
He loves to cook them in his Outdoor Kitchen pizza oven
that he built himself!

He makes the Best Pizza Dough Ever

He has quite a following,
and his youngest son often helps him in the kitchen and on the grill
Charlie Brown and CC think their uncle is really funny

Try these tasty combos
Corn & Asparagus, Fresh Peach with Sausage & Balsamic

HHjr doesn’t make desserts,
but he loves ice cream
and gave me an ice cream maker, hint, hint
I made him a batch of Raspberry Dream Ice Cream
A refreshing summer dessert!

Oh Jenna! Every one of these looks such a treat! Those wontons sound just wonderful, along with the tomato pie, salmon and maple bacon onions! The big question — is HE cooking on Dad’s day or does he get a day off? I wish it a happy one for him.

What a nice way to honor your son Jenna! I suspect that there is never a dull moment in your house. I think I’m with you on the scallops and creamy bacon pasta but those pork shoulder slices with pineapple on the Trompoking are a pretty close second! I hope he had a wonderful Father’s Day!!
