Recipe Box, Lemon Shooters

A little lemon love today!

These mini dessert parfaits are just the right size

to make your sweet tooth happy

without feeling too guilty

There is no baking involved, just layering a little this and that~

crushed lemon cookies, marscapone cheese, lemon curd

and whipped cream!

I have a set of mini parfait glasses that I have acquired

from a favorite restaurant, Seasons 52

Their signature desserts are called Mini Indulgences

Sometimes I’ll get one to take home and enjoy later

This type of shot glass is widely available on Amazon

in many styles, colors,

and you can choose from plastic, acrylic or glass

You can also use any type of small glass,

or a martini glass as I did for Caramel Marscapone Martini

This mixed pattern set of 4 spoons is on Amazon here

First, put the cookies into a plastic bag

and crush them with a rolling pin

or squeeze the bag with your hands

I used Bud’s Best mini Lemon Cremes

but you can use Oreo lemon or golden Oreos

Put a layer of cookie crumbs into the bottom of each glass

Tamp the cookie pieces down

with the bottom of a small glass or seasoning jar

making a more compact layer

Next add a heaping spoonful of marscarpone cheese

Use a knife or back of a spoon to push it down into a more even layer

Repeat these steps with the lemon curd

Top with a squirt of whipped cream,

I used light whipped topping, only 15 calories for 2 Tbsp!

Garnish with a fresh strawberry or cookie pieces or crumbles

Easy to pull out of the fridge and enjoy!

Lemon Shooters

A no bake dessert in a shot glass made with cookie crumbs, marscapone cheese, lemon curd and whipped cream for a mini indulgence

Equipment

  • glasses or trifle bowl

Ingredients
  

  • lemon cream cookies or gold Oreos
  • lemon curd
  • marscapone cheese
  • whipped cream
  • strawberries, optional

Instructions
 

  • Place cookies into a plastic bag and crush with a rolling pin or squeezing with your hands
  • Put cookie crumbs into the bottom of the glasses, or bowl you are using and tamp them down to form a somewhat even layer
  • Top crumbs with a heaping spoonful of marscapone cheese and smooth it into a layer with a knife or spoon
  • Repeat the above step with lemon curd
  • Top with a squirt of whipped cream*
  • Garnish with fresh strawberry, small cookie or crushed cookie crumbs
  • Refrigerate until serving

Notes

*Whipped cream tends to deflate quickly so for best results add it right before serving
Ingredient amounts will vary due to type of glass or bowl used
You can also make this in a trifle bowl instead of individual servings

    What a cute, easy, and calorie-controlled by size dessert! Perfect for any time of year! I’m thinking about how it could be transformed into a chocolate desert. Chocolate Oreos, of course, and keep the marsacpone and whipped topping, but what could be used instead of lemon curd?
