This Spring is flying by,
it’s so hard to believe tomorrow is May 1!
Cinco de Mayo, the Kentucky Derby, Mother’s Day
and Memorial Day, all coming up~
and we will be celebrating a lot of family birthdays too!

There ended up being a lot of salads and lighter meals
on the bucket list this month,
so the theme/flavor of the month is Salad

Here’s what I made from the April Paint Bucket
the flavor/theme of the month was Colorful Recipes
We had an Easter Appetizer Buffet
that was based on traditional Master’s Golf Tournament food
since we were also watching the tournament
on TV Easter Sunday
I adapted a recipe from OMG Chocolate Desserts
and made Blueberry Rolls with Lemon Glaze
so easy and quite delicious!
Blueberry, Orange & Spinach Salad
was adapted from this salad from Southern Discourse
an Asian Pasta Salad with Creamy Coconut dressing
is perfect for warm weather dining
I cooked a Bacon Wrapped Hot Dog in the Air Fryer

I learned that it is just as easy to bake them
in the oven and the clean up is less,
and I re-shared my favorite hot dog recipe
Bacon Wrapped Hot Dogs with Pineapple Salsa,
perfect for warm weather, picnics and BBQs

Cheesy Broccoli, Cauliflower & Bacon Casserole,
adapted from Eatwell 101
is a delicious way to eat your veggies
Carrot Cake mix is the base of 3 great Spring recipes,
Carrot Rolls, Baby Carrot Cakes, Cottontail Cake

My Grandmother used to make a hot chicken salad, and I was reminded of it the other day as I was going through some of her recipes. I can’t wait to see your recipe.
