Easy Recipes for Memorial Day

We will be spending Memorial Day at the beach,

and being the first weekend of Summer,

we won’t be the only ones!

We always cook, the restaurants are much too crowded

My son, the chef, and I like to think about the menu in advance

so I have been looking through my recipes,

collecting easy favorites to make that are family friendly

Breakfast is always very casual, everyone getting up at different times~

Pretty much self yourself with fresh fruit, sweet rolls, yogurt and cereal…

Or how about a combination of breakfast bites on a stick~

These Grab and Go Breakfast Skewers are perfect!

Fruit, donut holes, small slices of pastries,

bagels spread with cream cheese and cut into bites,

small squares of coffee cake

and almond butter toasted sandwiches

You can do lunch on a stick too, BLT Skewers are a low carb option

You can amp them up and add salami, ham, cheese,

pickles and grapes to make Antipasto Skewers

Perfect to enjoy poolside or on the porch

The kids love grilled cheese sandwiches

and an easy way to make a bunch is to use a sheet pan

HHjr loves to grill, so we often have hamburgers and hot dogs

You can feed a crowd with a Hot Dog Bar

Individual plastic baskets make clean up a breeze!

I saw this set up on Pinterest and think it’s such a great idea

for an outdoor buffet~

an inflatable raft full of ice to keep things cold

We love to have a dip to snack on before dinner

This summery dip goes together in 5 minutes

It’s made with bacon, pineapple, several cheeses and sour cream

Sunshine Pineapple Dip

For dinner, we always have BBQ ribs

Everyone loves them, and this recipe for Asian BBQ Ribs

is a great twist on standard ribs with BBQ sauce

if you want to change things up a little

Fajitas are a favorite dinner too,

HHjr grills steak, chicken, peppers and onions

We set up a buffet with grated cheese, tortillas,

and purchased queso, guacamole, and salsa

Everybody can make their own, just the way they like it

Sweet Orange BBQ Chicken Thighs are effortless and oh so good

You can do your Whole Dinner on the Grill!

You can amp up the grilled pineapple

by marinating it with Fireball Cinnamon Whiskey

before grilling, so good!

If HHjr isn’t grilling the side dishes,

I will make a salad or do easy roasted vegetables

Even better with Parmesan cheese!

Roasted Zucchini and Asparagus Parmesan

The guys always want potatoes

Our go to potatoes are roasted red potatoes

and hash brown potato casserole

You can amp up the flavor in the hash brown casserole

with Ranch seasoning~ EZ Ranch Hashbrown Casserole

Roasted red potatoes are good seasoned with olive oil, salt & pepper,

but they’re even better roasted with onion, garlic,

Italian seasoning and fresh rosemary

Or you can season them with Ranch for Ranch Roasted Potatoes

My very favorite way to cook them is with fresh rosemary and gorgonzola

You can put the gorgonzola on only part of the potatoes

to leave some without for the kids

or people who don’t like bleu cheese

Roasted Red Potatoes with Gorgonzola & Rosemary

Dessert is usually ice cream or popsicles

but I’m thinking about making an Inside Out Berry Pie

It only takes minutes to make with cookies, Cool Whip,

sweetened condensed milk and berries

Or maybe a Triple Lemon Blueberry Bundt Cake

These are all easy, tried and true recipes

to enjoy all Summer long!

So many great ideas to choose from–but I’m going with the Sunshine Pineapple Dip and hashbrown casserole (great minds are in sync here as I had already bought the ingredients for this dish–have been craving it.)     My mouth is watering too Jenna! These all sound so delicious. The pineapple, bacon, cheese dip is a must make for me and I love love ribs – the Asian recipe looks so good. I must try the parmesan zucchini too; cheese makes everything taste better (I’ve added zucchini and parmesan to the grocery list lol)!
