Recipe Box, Loaded Spinach & Artichoke Quiche

When you don’t know what to make for dinner, make a quiche!

Quiche makes a delicious one dish meal

Plus you can make it ahead of time

and bake it when you’re ready

This one is loaded with fresh spinach, artichoke hearts, corn,

onions, bacon [not pictured], ham and cheese

You can make it in the time it takes to cook the bacon

Begin by putting the bacon on a parchment paper lined sheet pan

Bake it in a 400 degree oven and while it is cooking,

chop the onion and cut the ham

Saute the onions and when they are almost done

add the garlic and ham and let it cook for a minute or two

Next in goes the spinach

Turn the burner off, cover the pan and let it sit for a couple of minutes

Uncover and stir the wilted spinach into the onions and ham

Now stir in the corn and artichokes

Put the pie crust into a deep pie dish, pleat the edges to fit,

and spread bottom with dijon or Honeycup mustard

Add 1/2 of the sauteed vegetable mixture

Check the bacon after 15 minutes,

and continue cooking for 2-5 minutes until it is crispy

Drain it on paper towels

Break bacon into 1 inch pieces

Put half of the bacon and cheese on top of the vegetables in the dish

Repeat layers

At this point you can cover the dish

and refrigerate it for baking later

When ready to bake, put it on a sheet pan

Beat the eggs, stir in the milk, and slowly pour it over the quiche,

letting the liquid seep down into all the nooks and crannies

Bake at 350 degrees for 1 hour,

check, and if it still is runny in the center,

continue to bake for 5-10 more minutes

Remove from oven and let it sit for 15 minutes

to set completely before cutting

Cut into wedges to serve

  2. I love quiches, especially making them ahead of time for company breakfasts. I underbake them, then refrigerate. In the morning, I can pop it back in the oven and finish baking. Your recipe looks wonderful. I like the addition of spinach. Yum!

I KNOW I would love this. Funny, but it brought up a very old memory and a recent one. The old one–suddenly I was a young mom in Marie Callender’s in Austin falling in love with my very first quiche ever. Just a week ago I was attending my oldest granddaughter’s graduation celebration. My daughter made sliders with an artichoke & spinach filling (and I assume cream cheese). It reminded me of something you would make. Everyone bragged on it and the nice thing was she made it especially to accommodate the younger sister who finds herself post lockdown not liking meat or eggs. At any rate, I know your quiche is delicious.

    • Thank you Linda! I have a fond memory of my first quiche too, I was dining with my dad at a fancy Los Angeles restaurant and had quiche Lorraine~ I was in love! The sliders sound so good, I have pinned a spinach & artichoke slider recipe, and after your enjoyment of one, I must try it soon!

Your quiche is filled with such amazing ingredients! I am going to pin this recipe. I often make frittatas as I usually like to save on calories or I don’t have pie crust.
    Thanks for the delicious share!
