Recipe Box, Loaded Spinach & Artichoke Quiche

When you don’t know what to make for dinner, make a quiche!

Quiche makes a delicious one dish meal

Plus you can make it ahead of time

and bake it when you’re ready

This one is loaded with fresh spinach, artichoke hearts, corn,

onions, bacon [not pictured], ham and cheese

You can make it in the time it takes to cook the bacon

Begin by putting the bacon on a parchment paper lined sheet pan

Bake it in a 400 degree oven and while it is cooking,

chop the onion and cut the ham

Saute the onions and when they are almost done

add the garlic and ham and let it cook for a minute or two

Next in goes the spinach

Turn the burner off, cover the pan and let it sit for a couple of minutes

Uncover and stir the wilted spinach into the onions and ham

Now stir in the corn and artichokes

Put the pie crust into a deep pie dish, pleat the edges to fit,

and spread bottom with dijon or Honeycup mustard

Add 1/2 of the sauteed vegetable mixture

Check the bacon after 15 minutes,

and continue cooking for 2-5 minutes until it is crispy

Drain it on paper towels

Break bacon into 1 inch pieces

Put half of the bacon and cheese on top of the vegetables in the dish

Repeat layers

At this point you can cover the dish

and refrigerate it for baking later

When ready to bake, put it on a sheet pan

Beat the eggs, stir in the milk, and slowly pour it over the quiche,

letting the liquid seep down into all the nooks and crannies

Bake at 350 degrees for 1 hour,

check, and if it still is runny in the center,

continue to bake for 5-10 more minutes

Remove from oven and let it sit for 15 minutes

to set completely before cutting

Cut into wedges to serve

Loaded Spinach Artichoke Quiche with Corn, Bacon, & Ham

This quiche is loaded with vegetables, bacon and ham for a delicious 1 dish meal. It can be assembled early in the day and baked later.

Equipment

  • 1 deep dish pie pan

Ingredients

  • 1 pie crust dough round
  • 1 bag 6 oz baby spinach leaves
  • 1 can 14 oz. quartered artichoke hearts, drained
  • 1 can 15 oz. corn, drained
  • 6-8 strips thick cut bacon
  • 1/2 onion
  • Dash garlic powder
  • 1 T olive oil
  • 1 T butter
  • Salt & pepper
  • Dijon mustard
  • 2 cups grated cheese like Creamy Melt Cheddar Blend
  • 1 cup milk
  • 4 eggs

Instructions

  • Put bacon on a parchment paper lined baking sheet. Cook in a 400 degree oven for 15 minutes. Check bacon and continue cooking for 2-5 minutes until crispy.
  • Drain on paper towels. Break into 1 inch pieces
  • While bacon is cooking, place dough in pie dish and pleat the edges
  • Spread the bottom of dough with mustard
  • Put onions in skillet with olive oil and butter and season with salt and pepper. Saute over medium low until caramelized, stirring occasionally, about 25 minutes.
  • Sprinkle with garlic and stir
  • Add ham and cook, stirring, for a minute or two, stir and turn burner off.
  • Add the spinach and cover pan. Let the covered pan sit for several minutes so the spinach will wilt down. Uncover and stir spinach into onion mixture.
  • Stir in artichoke hearts and corn.
  • Place half of mixture into pie dish. Sprinkle with half of cheese and bacon pieces. Repeat layers, ending with cheese. At this point dish can be covered and refrigerated for baking later if desired.
  • When ready to bake, beat eggs and add milk
  • Pour mixture slowly over the ingredients, letting it seep down into all the nooks and cranies.
  • Bake at 350 degrees for 60 minutes or until set in the center. Let rest for 15 minutes before slicing.
