Sunday Supper, 3 Favorite Shortcut Meals

I know people think HHjr and I cook a lot, and we do,

but we also have some favorite short cut meals

made with a little help from all ready prepared ingredients

Here are our 3 favorites

Let’s start with Chicken Cordon Bleu

*boneless breast of chicken, stuffed with ham and cheese,

and coated with fine breadcrumbs and baked

Looks like a nice fancy dinner doesn’t it?

Here’s how easy this is!

First of all, I buy the chicken cordon bleu from Fresh Market ,

an upscale grocery store chain

It is prepared daily in the store

and can be wrapped and frozen for convenience

{thaw before baking}

If you don’t have Fresh Market check at grocery stores near you,

more and more are offering freshly prepped meals

in the meat department

I serve it topped with a generous amount of Maple Dijon Sauce

which can be made in under 2 minutes

3 ingredients, maple syrup, mayonnaise and Dijon Mustard

This combo is also used for another easy favorite

Honey Mustard Maple Chicken

I cooked the asparagus in my air fryer, in 10 minutes, so easy!

Rinse, break off the tough ends,

place in the air fryer, season with salt and pepper,

spray with olive oil and top with Parmesan

{You can also prepare it like this and bake in the oven

at 400 degrees for 15 minutes}

I served the chicken and asparagus with Ben’s Ready Rice

It cooks in the microwave in 90 seconds and comes out perfectly

Our second favorite is Saving Time Salad

The time saver here is using chicken nuggets from Chick FilA

The salad base is crispy romaine lettuce,

topped with warm chicken nuggets, bacon pieces, grapes

and optional cucumbers, tomatoes,

blanched asparagus and pecans

dressed with homemade

Fleming’s Bleu Cheese Dressing

HHjr and I both love this salad and have it about once week

If you’re not a fan of bleu cheese, use any dressing you want

Our 3rd favorite gets a head start with prepared tomato soup

and frozen gnocchi

Tomato Gnocchi & Spinach Soup

The gnocchi and spinach cook right in the soup while it is heating

A few stirs and it’s ready!

Maple Dijon Sauce

This 3 ingredient easy sauce is wonderful on chicken, sandwiches or even on a salad
Prep Time 2 minutes
Course condiment
Cuisine American

Ingredients
  

  • 3/4 cup mayonnaise I like Duke's
  • 1/2 cup Dijon mustard
  • 1/2 cup real maple syrup

Instructions
 

  • Put all ingredients in a measuring cup or mixing bowl and stir to combine
  • If you are using this sauce for chicken, heat in 30 second intervals in the microwave on high until desired temperature is reached then pour over baked or grilled chicken
  • If using on sandwiches or salads use sauce cold or at room temperature
  • Store covered in the refrigerator

Everything Ham and Swiss Sliders

Air Fyer Asparagus

Delicious asparagus in just 10 minutes
Prep Time 5 minutes
Cook Time 10 minutes
Course Side Dish
Cuisine American

Equipment

  • air fryer*

Ingredients
  

  • fresh asparagus spears
  • olive oil spray
  • salt and pepper
  • Parmesan cheese

Instructions
 

  • Rinse asparagus and snap off tough ends
  • Place asparagus in the air fryer, season with salt & pepper, spray with olive oil and sprinkle with Parmesan cheese
  • Set air fryer temperature to 400 degrees and cook for 8-10 minutes. Time will depend on size of the spears and your machine, so check at 7 minutes and continue to cook until desired doneness is reached. Mine were perfect after 10 minutes

Notes

you can also roast asparagus in the oven on a cookie sheet at 400 degrees for 15 minutes

    Jenna, your shortcut recipes look delicious. I wish we had a Fresh Market. Our Chick-fil-A just reopened after a three month remodel. It has been so packed you could not even get in. I love a quick but tasty meal. Thank you and HHjr for the recipes. Yay, for cooler temps this week!

  5. No air fryer here but that dijon sauce looks great and I’ll be glad to try it. A delicious dinner. I bought my first Due’s mayo the other day. I’d never heard of it til you. Haven’t tried it yet but will soon!

    This all looks so good. I am impressed with how healthy some of the convenience foods are these days. We have started using the rice packets too. Costco sells some brown rice and quinoa packets. It is hard to beat 90 seconds cook time for brown rice.

    Yum, yum, and yum Jenna – all these recipes look delicious! And shortcut is even better. I always have to eat before I check out your recipes or who know what would happen lol.
