Recipe Box, Fall Salads

Fall is in full swing, the temps are lower and
even our trees in the South are starting to burst with color
When you’re thinking about Fall comfort foods, don’t forget salads~
they can be a wonderful & healthier option
Loaded Kale Salad with Apple Cider Vinaigrette
has both pumpkin and pomegranate seeds, along with apples and pecans
You can also add cooked chicken and cheddar for a main dish meal

Roasted Sweet Potato Spinach Salad with Maple Bacon
is dressed with my favorite Mustard Maple Dressing

Roasted Broccoli & Asparagus Spinach Salad has pears,
bacon and optional bleu cheese
The broccoli and asparagus are roasted with Parmesan cheese
which turns into frico for another layer of flavor and crunch

Roasted Grapes pair with Asiago cheese and pine nuts for

Fall Harvest Salad is full of flavor with 2 types of apples,
red grapes, bacon, sunflower seeds, cranberries, bleu cheese,
and topped with Cinnamon Shallot Vinaigrette

When you top a salad with roasted fruit and/or vegetables,
the juices from cooking automatically dress the salad greens
when they are placed on top hot from the oven
Spinach Salad with Roasted Pear, Prosciutto & Brussels
Roasted Brussels sprouts pair well with bacon and bleu cheese
and they make a great salad topping
Fall Salad with Bacon, Brussels & Bleu Cheese
So when you need a break from thick soups,
casseroles, and chicken pot pie,
think salad!
