Watermelon is so good in the summer and is delicious on its own…

but it is also wonderful ingredient in summer recipes~

You can even have it in a cocktail!

Let’s start with salad

In this Spinach & Watermelon Summer Salad, salad pictured above,

watermelon is paired with strawberries, pine nuts,

crumbled feta or blue cheese and tossed with a mild vinaigrette

This Pina Colada Fruit Salad is so refreshing and light,

and features watermelon with pineapple, other summer fruits,

and dressed with a drizzle of coconut cream and shredded coconut

Tropical Summer Fruit Spears are an easy,

kid friendly side dish or snack

You can serve them plain or

drizzled with a light vinaigrette and topped with

chopped macadamia nuts

Grilled chicken is wonderful topped with Watermelon Salsa

The salsa is made with watermelon, cucumber, onion, mint,

lime juice and brown sugar

It also is great on Chicken Nachos!

Cool off this summer with a Watermelon Cocktail

Mix Bacardi Tropical Rum with diced watermelon and a splash of water

and sip away!

    There is not even one of these beautiful dishes that I have come close to making or eating, but they all sound so good. It’s funny, but my favorite is the beginning picture of a watermelon sailboat–so cute, so easy!
