Recipe Box, Corn Salad

Corn salads seem to be trending this summer

I am a huge fan of summer corn so

I”ve been reading many corn salad recipes

Some have a lime dressing which doesn’t appeal to me

and some have a mayonnaise based dressing

which doesn’t really appeal to me either

I decided to keep it simple and not use any dressing at all

and just enjoy the fresh flavors of the corn,

tomatoes, green onions and bacon

I cooked the corn in the microwave

Allow 4 minutes per ear on high

or you can roast it right in the husk in the oven

at 350 for 1 hour

You can read more about these cooking methods

and other tips and tricks for corn on the cob here

Put the corn in a salad bowl along with chopped tomatoes,

green onions and bacon pieces

and season with salt and pepper to taste

We enjoyed this as a side dish with cheeseburgers

Easy, fresh and delicious!

Simple is always best when using fresh ingredients. Love the idea of the combo of corn and bacon.

  2. Perfect for bbq!

Big fans of fresh corn here too Jenna. I love this idea and the only thing I may change is I’ll grill the corn. We grill a lot of corn and it’s so fresh and delicious. I can’t wait to make your corn recipe.

This sounds great, Jenna! I love the microwave way of cooking corn in the husks.

  5. Pam says:

Jenna, corn is my favorite summer vegetable. This simple recipe allows the corn to be the star! Of course, bacon always adds flavor. Happy Thursday!

  6. All the goodness of the season in one dish!

  7. My kind of food – but my family would love it more if I called it a “BACON” salad.

  8. lghiggins says:

Simple and basic, but beautiful and between the corn and the bacon, I know I would love it!

Jenna, I realized today that I have not been getting emails like I used to saying you had commented on my comment. I enjoy the dialogue with you, so I looked at your last blog post. I commented. You commented. I did not get an email to indicate that. Do you know if others are having this problem? I haven’t changed any settings. I don’t know if this is on my end or yours. I do know that WordPress can be flaky. For example, today I was able to click on the “like” button on a different blogger’s comment section; I haven’t been able to do that in months on her blog.🤪

We had a corn salad tonight very similar to this one. I’ve pinned it, and I will make this version next time.

  11. Nancy says:

Doesn’t this look yummy. We have early fresh corn. Going to make this today! Thank you!

  12. Pattie says:

Is there anything that says summer more than fresh corn on the cob and tomatoes? My cherry tomatoes are just starting to come in, so, this will be perfect. Plus, it is so pretty!

  13. Karen says:

I’ve found that salting the tomatoes and letting them sit a few minutes creates a nice flavored tomato juice for a nice salad dressing.

  14. I am always wild about corn salad but this is a new one on me. I love every single ingredient — gotta try it!

What a great way to use corn curls! Thanks for sharing at the What’s for Dinner party. Your contributions have been wonderful.

  16. Kim says:

Oh m y gosh Jenna, it’s been so hot here and this looks just perfect in the heat! Love fresh corn and fresh tomatoes – nothing better – and bacon is the crowning touch. I’m not sure if I’d add a dressing either, especially with that cheeseburger that looks absolutely mouthwatering! I hope you are managing to stay cool down there!

  17. Mary says:

It’s hard to beat fresh corn in the summer Jenna! I feel so bad for the corn farmers in our area that are struggling with the lack of rain and excessive heat.

  18. Joanne says:

That sounds delicious! We just got some local fresh corn from the farmstand and it is just perfect right now. I love fresh salads like this.
