Corn salads seem to be trending this summer
I am a huge fan of summer corn so
I”ve been reading many corn salad recipes

Some have a lime dressing which doesn’t appeal to me
and some have a mayonnaise based dressing
which doesn’t really appeal to me either

I decided to keep it simple and not use any dressing at all
and just enjoy the fresh flavors of the corn,
tomatoes, green onions and bacon

I cooked the corn in the microwave
Allow 4 minutes per ear on high
or you can roast it right in the husk in the oven
at 350 for 1 hour

Put the corn in a salad bowl along with chopped tomatoes,
green onions and bacon pieces
and season with salt and pepper to taste

We enjoyed this as a side dish with cheeseburgers

Easy, fresh and delicious!

Corn Salad
Ingredients
- 3 ears corn on the cob cooked
- 4 slices bacon, cooked until crispy
- 12 cherry tomatoes
- 3 green onions
Instructions
- Cut the corn off the cob and put it in a large salad bowl
- Cut tomatoes in half and chop the green onions and add them to the bowl
- Break bacon into small pieces and add to bowl
- Season with salt & pepper to taste
- Toss together and serve
- Increase ingredients as needed for more or larger servings

Big fans of fresh corn here too Jenna. I love this idea and the only thing I may change is I’ll grill the corn. We grill a lot of corn and it’s so fresh and delicious. I can’t wait to make your corn recipe.

Jenna, I realized today that I have not been getting emails like I used to saying you had commented on my comment. I enjoy the dialogue with you, so I looked at your last blog post. I commented. You commented. I did not get an email to indicate that. Do you know if others are having this problem? I haven’t changed any settings. I don’t know if this is on my end or yours. I do know that WordPress can be flaky. For example, today I was able to click on the “like” button on a different blogger’s comment section; I haven’t been able to do that in months on her blog.🤪

Is there anything that says summer more than fresh corn on the cob and tomatoes? My cherry tomatoes are just starting to come in, so, this will be perfect. Plus, it is so pretty!

I’ve found that salting the tomatoes and letting them sit a few minutes creates a nice flavored tomato juice for a nice salad dressing.

Oh m y gosh Jenna, it’s been so hot here and this looks just perfect in the heat! Love fresh corn and fresh tomatoes – nothing better – and bacon is the crowning touch. I’m not sure if I’d add a dressing either, especially with that cheeseburger that looks absolutely mouthwatering! I hope you are managing to stay cool down there!

It’s hard to beat fresh corn in the summer Jenna! I feel so bad for the corn farmers in our area that are struggling with the lack of rain and excessive heat.
