Take-out Tuesday, 2 Easy Zucchini & Squash Sides
We are eating lots of zucchini and yellow squash this summer
and here are two more ways you can enjoy it
Cut it into quarter slices and cover them generously
with blue cheese* and finely grated Parmesan
*if you’re not a fan of blue cheese just leave it out
Put it into a baking dish

Bake at 400 degrees F for 30 minutes
or until vegetables are soft and cheese is melted
Easy, cheesy, good!

You can also make a vegetable flatbread
We had a leftover grilled ear of corn
and one zucchini and one yellow squash
The “Chef” made a flatbread with it
to serve as a side with grilled chicken

The crust is made with a crescent roll dough sheet
and is topped with a layer of jarred Alfredo sauce,
then corn cut from the cob, and slices of zucchini and squash
The vegetables are topped with shredded Parmesan cheese

Bake it at 375 degrees F about 15 minutes
or until dough is cooked and golden and cheese is melted
Cut into squares to serve




Parmesan & Blue Cheese Baked Zucchini & Squash
Ingredients
- zucchini
- yellow squash
- Parmesan cheese
- blue cheese crumbles
Instructions
- Cut zucchini and squash into bite size pieces
- Place them in a shallow baking dish and generously cover them with Parmesan cheese and blue cheese crumbles
- Bake at 400 degrees for 30 minutes or until vegetables are softened and cheese has melted

Corn, Zucchini, & Yellow Squash Flatbread Alfredo
Equipment
- sheet pan
- parchment paper
Ingredients
- 1 small zucchini
- 1 small yellow squash
- 1 ear corn, cooked
- 1 crescent roll dough sheet
- 1 cup Alfredo sauce
- shredded Parmesan cheese
Instructions
- Line a baking sheet with parchment paper
- Unroll dough sheet and put it on the parchment paper
- Top with Alfredo sauce
- Cut corn from the cob and put it on top of the Alfredo sauce in an even layer
- Cut squash and zucchini into small pieces and put on flatbread
- Cover everything with shredded Parmesan
- Bake at 375 degrees F for 15-20 minutes until dough is cooked through and golden and cheese has melted
- Cut into large squares to serve
