Easy Breezy Summer Dips

Dips are always welcome at any type of gathering

or a before dinner nosh

In the summer, chances are you want something cool

These dips will put a smile on everyone’s face,

including yours,

because they are so easy breezy to put together!

Daisy Dip looks so pretty

and as everyone starts to dive in, it sort of mixes itself

Loaded Salad Dip is a dip version

of a Chef’s Salad or Cobb Salad

Breezy Party Dip has celery sticks in a border around the dip,

making it not only look festive, but hard to resist grabbing one…

Place a bowl of sturdy chips or crackers nearby too

Amped Up Onion Dip has sauteed onions and bacon

added to prepared onion dip from the grocery store

5 Minute Mystery Dip is a long time favorite

Put a block of cream cheese on a platter,

spoon jam or chutney on top,

and top with sliced green onions, crumbled bacon,

and chopped nuts

{peanuts, dry roasted peanuts, macadamias, pecans}

Daisy Dip

Prep Time 5 minutes
Cook Time 20 minutes

Ingredients
  

  • 1 bag 7 oz., waffle cut potato chips
  • 1 cup onion dip
  • 30-40 snow peas [2 handfuls]
  • 6-8 pieces bacon [or cooked bacon bits]
  • 3/4 cup chopped sweet peppers

Instructions
 

  • Line a baking sheet with parchment paper. Cook bacon slices on parchment at 350 for 20-25 minutes until crisp and cooked through. Drain.
  • Rinse snow peas and string if desired. Place peas in a bowl with 2 T water and microwave 1 minute. Remove peas from bowl and pat dry.
  • Arrange chips in a circle in a large low bowl or on a rimmed platter. Put dip in the center. Arrange snow peas around dip. Sprinkle peppers and bacon around the edges of the dip. Serve immediately.
  • Increase quantities and proportions anyway you like and double for a larger group.

Loaded Salad Dip

This is a modified Chef's or Cobb Salad turned into a dip! A creamy ranch dip is topped with bacon, lettuce, tomatoes, corn and cheese for a delicious dipping adventure!

Equipment

  • large shallow bowl or pie dish

Ingredients
  

  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1 pkg Ranch seasoning mix
  • 1 ear cooked corn on the cob*
  • 4 slices crispy bacon
  • 1 cup chopped romaine lettuce
  • 6 cherry tomatoes
  • 1/2 cup grated Cheddar cheese
  • 1/4 cup blue cheese crumbles

Instructions
 

  • Mix sour cream, ranch seasoning and cream cheese together. You can mix them right in the bowl you are using to serve the dip.
  • After mixing form it into a large flat circle about 1 inch thick
  • Cut tomatoes into 1/4s, cut corn from the cob and tear the bacon into small pieces
  • Cover the ranch dip with lettuce and top with corn, bacon and tomatoes then sprinkle with cheddar and blue cheese
  • Serve it with sturdy chips or crackers

Notes

*cook corn in the husk in the oven at 350 for 45 minutes or in the microwave on high for 4 minutes

BREEZY CHEESE DIP

This 5 minute prep dip is a great addition to twice baked potatoes too!

Ingredients
  

  • 16 oz. sour cream
  • 16 oz. cream cheese softened
  • 2 oz. dry Ranch dressing mix
  • 1 1/2 cups grated extra sharp Cheddar cheese
  • 2.8 oz package bacon bits {Oscar Mayer}
  • 2 green onions chopped reserving some of the green tops for garnish

Breezy Twice Baked Potatoes

  • 2 cups Breezy Cheese Dip
  • 4 baking potatoes
  • 4 Tbsp butter

Instructions
 

Dip

  • Combine sour cream and cream cheese. Stir in ranch dressing mix. Add cheese, bacon bits and 2/3 of the scallion pieces. Stir to combine and distribute ingredients evenly.
  • Place into a serving dish {I used a white casserole dish} and line edges with celery sticks. Garnish with reserved scallion pieces. Can be made in advance and refrigerated until serving.

Breezy Twice Baked Potatoes

  • Bake Idaho or Russet potatoes until done. Let cool for 30 minutes. Carefully slice a thin piece of potato off the top so you can scoop out the insides.
  • Carefully scoop out cooked potato, leaving an intact potato shell. Place potato into a mixing bowl with softened butter, 1 Tablespoon per potato.
  • Cover bowl and let sit for 15 minutes, then stir butter into potato. Add as much of the dip as you want to the potato mixture and mash/stir to combine. Scoop all this back into shells, filling to overflowing and shape/mash filling with your hands to smooth it out.
  • Refrigerate until baking time. Bake filled potatoes uncovered at 350 for 30-45 minutes until heated through.

Notes

Note: This recipe makes about 4 cups of dip. Reduce ingredients by half or more to make less

AMPED UP ONION DIP

Amp up prepared onion dip with caramelized onions and bacon
Prep Time 30 minutes
Course Appetizer, condiment
Cuisine American

Ingredients
  

  • 1 tub prepared onion dip
  • 1/2 sweet onion diced
  • 4 slices thick applewood smoked bacon

Instructions
 

  • Fry bacon until crisp, drain and reserve drippings.
  • Saute onion in 1-2 Tablespoons of reserved bacon drippings, over medium low heat about 20 minutes, until onions are beginning to caramelize, stirring occasionally.
  • Remove onions from pan and cool.
  • Combine onions and dip. Crumble bacon and gently fold into dip.
  • Serve dip with sweet red pepper scoops, ruffled potato chips, carrot chips or roasted red potato halves. Makes 6 servings, double recipe for a larger group.

5 Minute Mystery Dip

Sweet, salty, creamy, crunchy!
Prep Time 5 minutes

Ingredients
  

  • 4-6 oz. shredded sweetened coconut
  • 8 oz. cream cheese block
  • 8-12 oz. jam or chutney
  • 4-6 slices bacon, cooked and crumbled
  • 4-6 oz. dry roasted or roasted and salted peanuts
  • 3-4 green onions, chopped
  • crackers, sturdy chips or baguette slices

Instructions
 

  • Place cream cheese in the center of a large platter
  • Spread with a generous layer of jam or chutney, letting it drip over the sides
  • Add a layer of nuts, bacon, onions, and coconut
  • Repeat layers
  • Arrange crackers around the edge of platter and provide spreaders for serving

Notes

Use orange marmalade, apricot jam, strawberry jam, mango chutney
Eliminate the bacon to make a vegetarian version
If you do a little prep work in advance [cooking the bacon, chopping the nuts and slicing the onions] it literally goes together in minutes.  This is a great dish to bring to a party and assemble on site!

    A round up of tasty dips for easy entertaining Jenna! I have made your mystery dip years ago. My version came from Southern Living and had a layer of flaked coconut in addition to the cream cheese, chutney and peanuts. It’s an odd mix of ingredients for sure, but shockingly good. Happy Sunday ♥

    I love dip. I could eat it as a meal. I’ll often dip vegetables (or fruit, depending upon the type of dip), and consider it to be quite a healthy snack. It probably isn’t, but I’ve pretty much convinced myself that it is.
