Nectarine Brioche with Prosciutto, Basil, & Balsamic

Ingredients
  

  • brioche bread*
  • fresh nectarines sliced
  • proscuitto
  • ricotta cheese
  • bleu cheese crumbles
  • fresh basil for garnish
  • balsamic reduction for garnish

Instructions
 

  • Slice brioche in half or into slices.
  • Spread with a generous layer of ricotta {season with salt and pepper if desired}
  • Top with bleu cheese crumbles and then nectarine slices.
  • Top nectarines with torn pieces of prosciutto.
  • Broil for 4-5 minutes until prosciutto is crispy, bread is toasted on edges and cheese is melted. Garnish with basil and a drizzle of balsamic reduction.

Notes

*brioche bread is available in many forms, loafs, rolls, baguettes. You can cut it into slices as you would for crostini or use an open face roll as I did and cut it into smaller pieces. Look for it in the specialty sections of your grocery or bakery.
