Cut ends off zucchini. Make deep cuts, to form slices, about 1/4 inch apart, by placing zucchini between two skewers on a cutting board to prevent cutting through zucchini. Wrap zucchini in a clean towel and microwave for 2 minutes on high. Check for softness, and continue to microwave at 1 minute intervals until zucchini is softened on the inside but still able to retain it’s shape.
Make dressing by mixing olive oil with seasoning. Place zucchini on a non stick foil or parchment paper lined baking sheet. Brush liberally with dressing.
Fold or cut meat and cheese into smaller pieces and stuff in between slices. Drizzle with Alfredo. Sprinkle with Parmesan, bread crumbs and green onions. Can be refrigerated at this point if you want to assemble in advance.
Bake at 400 degrees for 15-20 minutes or until melted and beginning to brown
