LIGHT AND CRISPY FRIES

Ingredients
  

  • 2 cups Peanut Vegetable or Canola oil for frying
  • kosher salt

Instructions
 

  • Cut potatoes with a spiralizer or cut into fries with a knife. Soak potatoes for several hours or overnight in a bowl of cold water, in the refrigerator. Make sure water covers the potatoes.
  • When ready to cook, drain potatoes thoroughly on a kitchen towel and again on paper towels to get potatoes dry.
  • Put oil in a deep pan. Heat oil to medium heat and fry potatoes in batches for 4-5 minutes to soften and start the cooking process. Drain on paper towels.
  • Increase heat a little and fry potatoes in batches again, this time until golden and crispy. Remove to paper towels and sprinkle immediately with salt. Keep potatoes warm in a 200 degree oven. Makes 4 large servings
