mini sweet peppers
20 ounce, 2.5 servings each, Stouffer’s Macaroni and Cheese [you will have some left over]
toothpicks or skewers
Prepare macaroni and cheese according to package directions.
Wash, core and seed jalapenos and peppers, cutting off the stem ends and cutting them in half. Be careful with the jalapenos, wear gloves if you are sensitive.
Stretch bacon strips gently and cut into thirds. Place a heaping spoonful of mac and cheese in each pepper half. Wrap with a third of a strip of bacon and secure bacon with tooth pick or on a skewer.
Grill until bacon is done and peppers are soft, or place on a baking sheet and cook at 400 until bacon is done and peppers are soft, 20-25 minutes. Makes 32
