Cook bacon in a skillet or on a parchment paper lined baking sheet [350 for 20-25 minutes] until crispy. Break into pieces.
Form dough into a rectangular crust and bake at 400 for 10 minutes or until set and starting to turn golden.
Remove from oven and drizzle with olive oil, using your fingers to spread it all over entire crust surface. Squeeze garlic head out onto dough and spread it around evenly with your fingers
Repeat with the fig jam, again using your fingers to break up the jam. Top with bacon pieces, then pear slices. Sprinkle with bleu cheese. Return to oven and bake at 400 for another 7-10 minutes until hot and crispy.
