Citrus Salad with Creamy Orange Vinaigrette

Ingredients
  

Salad

  • 1/2-1 cup spinach leaves per person torn
  • 1/2-1 cup chopped kale leaves per person massaged and cut into small pieces
  • blood orange, grapefruit or navel orange sections
  • Creamy Orange Vinaigrette
  • Almond slices toasted

Creamy Orange Vinaigrette

  • 1/4 cup fresh orange juice
  • 2 Tbsp olive oil
  • 1/2 clove garlic, pressed
  • 1 tsp sugar
  • salt and pepper to taste
  • 1 Tbsp plain Greek yogurt or sour cream

Instructions
 

Salad

  • Combine spinach, kale and fruit and toss with dressing to taste

Creamy Orange Vinaigrette

  • Put everything except sour cream in a jar and shake well to mix. Add sour cream or yogurt and shake well to combine. Makes about 1/2 cup
