BROWN RICE with mushrooms & onions

  • 8 oz sliced mushrooms
  • 1/2 medium onion chopped
  • raw brown rice to make 4-6 servings
  • 1-2 cans Chicken broth


  • Prepare rice according to package directions, replacing water with chicken broth.
  • Saute mushrooms and onion in a little Olive oil and butter until mushrooms brown and onion is translucent.
  • Stir into the cooked rice and turn into a greased casserole.  Pour a little Chicken Broth over all.
  • Cover and refrigerate until baking time.
  • To serve, heat rice for 30 minutes, uncovering after 15 minutes.  Serves 4-6


This rice is super simple to make, and you can load it up with any vegetables you like for a healthy side dish.  I like to add green beans, snow peas, carrots, peas, anything goes here!  Use chicken broth instead of water for cooking to make extra flavorful rice.
