Derby Day Biscuits

Ingredients
  

  • Parkerhouse Rolls [I use Sister Shubert’s] or use biscuits frozen, in a can, fresh or homemade
  • Orange Rolls [I use Sister Shubert’s] or use frozen rolls, rolls from the bakery, rolls from a can, or homemade
  • small slices of spiral sliced or deli ham [I use Archer Farm Spiral Sliced Ham from Target*]
  • butter
  • bleu cheese
  • orange marmalade
  • fig jam

Instructions
 

  • Bake rolls according to package directions and let cool. Carefully slice rolls in half. Saute ham slices quickly over medium high heat in a skillet with just a little butter or olive oil, until they gain a little caramelization.
  • Plain: Place 1-2 ham slices in each roll. Spread rolls with mustard or butter to taste, or leave them plain.
  • Orange: Place 1-2 ham slices on each roll bottom. Spread roll tops with a layer of orange marmalade and put on top of ham, marmalade side down.
  • Savory: Combine equal amounts of bleu cheese and butter and spread on bottom of rolls. Add ham and top with a generous layer of fig jam and enclose with roll top.
  • Bake the plain and orange rolls covered for 10-15 minutes to heat if desired. Serve the savory fig and bleu cheese rolls slightly warm or at room temperature.

Notes

*Archer Farms is Target’s brand. This is my favorite spiral sliced ham, it is full of flavor and is reasonably priced. Target sells it in 1/2s and 1/4s. I buy the 1/4 size and find that it is perfect for several meals, then there is plenty for casseroles or biscuits
