Brussels Parmesan

Even non sprouts fans will be tempted to try these Parmesan crispy sprouts

Ingredients
  

  • 1/2 cup Panko breadcrumbs
  • 1/2 cup freshly grated Parmesan
  • 14-16 Brussels sprouts*
  • 1/2 cup all-purpose flour
  • 2 large eggs beaten
  • salt & pepper
  • oil for frying

Instructions
 

  • Heat oil in fryer or deep sauce pan.
  • Trim off ends of sprouts and cut in 1/2.
  • Fill 1 bowl with flour, combine Panko and Parmesan in another bowl, and beat eggs in a third bowl and season eggs with salt & pepper.
  • Dip each Brussels sprout half into flour, then egg, then breadcrumb Parmesan mixture.
  • Working in small batches, drop sprouts into hot oil and cook for 3-4 minutes.
  • Remove from oil and drain on paper towels.
  • Keep warm in a 200 degree oven until all sprouts are fried.
  • Serve with a creamy ranch, Italian or blue cheese dressing for dipping.

Notes

*plan on 2-3 sprouts per person for appetizers or 4-6 sprouts for side dish
