Ingredients

Panko breadcrumbs
1/2
cup
freshly grated Parmesan

Brussels sprouts*

all-purpose flour

large eggs
beaten
salt & pepper
oil for frying
Instructions
Heat oil in fryer or deep sauce pan.
Trim off ends of sprouts and cut in 1/2.
Fill 1 bowl with flour, combine Panko and Parmesan in another bowl, and beat eggs in a third bowl and season eggs with salt & pepper.
Dip each Brussels sprout half into flour, then egg, then breadcrumb Parmesan mixture.
Working in small batches, drop sprouts into hot oil and cook for 3-4 minutes.
Remove from oil and drain on paper towels.
Keep warm in a 200 degree oven until all sprouts are fried.
Serve with a creamy ranch, Italian or blue cheese dressing for dipping.
Notes
*plan on 2-3 sprouts per person for appetizers or 4-6 sprouts for side dish
