Melt butter and cook shallot and ham in a large skillet. Add brown sugar and cook and stir about 3 minutes until bubbly and starting to caramelize.
Add pear and apple slices and saute 3-5 minutes until tender.
Pour mixture into crust.
Sprinkle with bleu cheese.
Combine cream and eggs, season with salt and pepper, and pour over ingredients in crust.
Bake at 375 for 40-45 minutes until golden and set in center.
Let sit for a few minutes before serving.
