4ozgorgonzola [I used Italian gorgonzola because it’s nice and creamy]

Instructions
Squeeze roasted garlic into a bowl and discard papery skin. Add butter and cheese. Mash together with a fork. Refrigerate for 30 minutes. Place butter mixture on a piece of plastic wrap and form into a log. Roll in parsley and wrap tightly. Refrigerate until use.
*Roast a head of garlic in foil with olive oil, salt & pepper at 400 for 1 hour
