Cheddar & Chive Hushpuppies

Ingredients
  

  • 1 cup yellow cornmeal
  • 3/4 cup self rising flour
  • 1 tsp kosher salt
  • 1/2 tsp smoked paprika
  • 1/2 small sweet onion grated
  • 1/4 cup chives or green onion tops chopped
  • 2 oz sharp cheddar cheese grated
  • 1 cup non fat buttermilk
  • 1 egg
  • peanut oil for frying

Instructions
 

  • Preheat oil in fryer or dutch oven to 350.
  • Mix remaining ingredients in a large bow until well combined.
  • Drop dough by heaping tablespoonfuls into hot oil, in small batches.
  • Fry 2-3 minutes and drain well on paper towels.
  • Salt immediately and serve or keep warm in a 200 degree oven. Makes about 16
