Ingredients

yellow cornmeal

self rising flour

kosher salt

smoked paprika
1/2
small sweet onion
grated
1/4
cup
chives or green onion tops
chopped

sharp cheddar cheese
grated

cup
non fat buttermilk

egg
peanut oil for frying
Instructions
Preheat oil in fryer or dutch oven to 350.
Mix remaining ingredients in a large bow until well combined.
Drop dough by heaping tablespoonfuls into hot oil, in small batches.
Fry 2-3 minutes and drain well on paper towels.
Salt immediately and serve or keep warm in a 200 degree oven. Makes about 16
