Spread tortillas with pimento cheese and a few dabs of sour cream.
Sprinkle peppers and onions evenly on top.
Roll tortillas tightly into logs, wrap in saran and refrigerate up to 48 hours.
To assemble tree, cut tortilla rolls into 1 inch pieces and stack on a flat bed of spinach leaves to look like a tree. Sprinkle with chopped parsley. Servings depend on size of tree, allow 2-3 pieces per person.
