Recipe Box, Sweet Heart Cakes

These little Sweet Heart Cakes are deceivingly delicious!

They are just yellow cake mix, eggs, butter and sugar, but the result is light and yet rich enough to make you smile and say ummmmmm!

For last Sunday’s birthday party, I decided to take a cake recipe from my January Paint Bucket {my bucket list of recipes} and try it in my heart shaped muffin tin.

The recipe I pinned was for Neiman Marcus brownies, a version of Paula Deen’s Gooey Butter Cake, and it is made in a 9″x13″ baking dish, then cut into squares.  I decided to give it a whirl in my heart pan and if it flopped I could run by the bakery and buy dessert.  It’s nice to have a Plan B, keeps the panic factor down!  You can see that I sprayed the pan thoroughly with cooking oil spray, and purposely didn’t clean up in between the hearts just in case the cakes overflowed a little.

There are two layers to this cake.  For the first layer mix 1 egg, the box of cake mix and melted butter, forming a soft dough.

Gently press this into your pan or muffin cups, filling about half way.  I sort of created a heart shell with higher sides to enclose the filling.

Make filling by beating the remaining 2 eggs with cream cheese and sugar until smooth and pour over first layer in pan.

I transferred the mixture to a measuring cup to make the pouring easier

I had more filling than dough

so next time I will make about half as much filling, but if you are making the 9×13 version it will work out fine.

They did indeed spill over the edges when baked! I didn’t dare touch them until they were completely cool, and then I eased them out of the pan.  I wish I had thought to tint the filling pink!

These would be a perfect little Valentine treat!

They would be great with a cup of coffee or tea too

SWEET HEART CAKES

Ingredients

  • 1 box yellow cake mix
  • 3 eggs
  • 8 oz cream cheese softened
  • 1/2 cup 1 stick butter, melted
  • 4 cups 1 lb powdered sugar

Instructions

  • Preheat oven to 300 and spray a 9×13 dish with cooking spray.
  • Mix cake mix, melted butter and one egg to a soft dough.
  • Press into the bottom of the pan.
  • Mix powdered sugar, softened cream cheese and remaining two eggs until smooth, about 1-2 mins.
  • Pour on top of crust.
  • Bake at 300 for 40-50 minutes until top is golden brown.
  • Makes 16 hearts as shown, with a little leftover filling.

Notes

make this in a 9×13 baking dish if preferred, and adjust baking time
