Recipe Box, Peach & Prosciutto Quesadilla

Here’s a fun light lunch or appetizer~so summery, sweet and tangy~

I like to crisp the tortillas on both sides before assembling

just a few minutes in a hot skillet with a little olive oil to get both sides golden

then slice the peeled peaches in half

and toss into the skillet or onto your grill, cut side down, to brown a little and get warm.  Add the prosciutto to brown a little too

slice the peaches and build the quesadilla with a layer of prosciutto

top with sliced peaches

a slice of cheese

Top with another tortilla and return to skillet on medium low

Cover with a lid to help warm and melt the cheese

and your summer sandwich is born!

The tang of the prosciutto plays off the sweetness of the fruit  and melted cheese

to deliver a burst of unexpected flavor

It is a great light bite or summer meal

PEACH & PROSCIUTTO QUESADILLA

Make 1 or multiples for a light meal or appetizers
Servings 1

Ingredients

  • 1 peach
  • 2-3 slices prosciutto
  • 2 small flour tortillas
  • 1 oz slice of Havarti Gouda or Fontina cheese,
  • brown sugar optional
  • olive oil

Instructions

  • Crisp tortillas on both sides in a little olive oil over medium high heat until golden, watching carefully.   
  • Peel peach and cut in half, sprinkle with brown sugar for added sweetness if desired.  
  • Brown peach and prosciutto in skillet  or on a grill, until just starting to brown. 
  • Place prosciutto on one tortilla, slice peaches halves and place them on top of prosciutto. 
  • Top peaches with a slice of a mild, good melting cheese such as Havarti, Gouda,  or Fontina.
  • Top with another tortilla and return to skillet.  Cover with a pot lid and warm quesadilla over medium low heat until cheese has melted.
  • Cut into 1/4ths to serve.  Makes 4 pieces, or 1 serving.  For appetizer servings plan on 1-2 quarters per person.

Notes

if you use larger tortillas, increase the ingredients to make it nice and full. You might want to add more cheese too, it helps “glue” the ingredients together. A larger tortilla will also yield more servings, cut it into 1/6ths or 1/8ths.
