Recipe Box, BBQ Grilled BBQ Chicken Nachos!

I just want to say that when I planned this post for today,  there was not a BLIZZARD in the forecast so I apologize to y’all who are suffering in sub zero temperatures and snow snow snow…but the south does have it’s advantages 🌴… and so sorry to rub it in, but  we have had some milder temperatures recently, ☀️ and of course the first thing the men around here thought of was, building a teepee in the woods  buying a new BBQ grill…

Our old gas grill was old, and basically falling apart, but we do have a Big Green Egg, and a charcoal grill so things weren’t desperate  😱  They could have just enjoyed the teepee   used one of those

NOPE,  they had to IMMEDIATELY run out that VERY day and BUY a whole new spankin’ set up and put it together and call NG and have him install the gas line NOW and try it out and run to the store and BUY smoker chips AND steaks AND chickens AND ribs and get something on the rotisserie IMMEDIATELY and MAKE homemade BBQ sauce AND put potatoes on to roast…

Seriously, it’s exhausting…

But I did reap some benefits  😊

Like these BBQ chicken nachos that HHjr whipped up with some leftover chicken he rotisseried the night before

He lined a baking pan with foil and filled it with our favorite thin and crispy tortilla chips

Piled on shredded chicken, sweet onion and red pepper slices, drizzled it with BBQ sauce and sprinkled it with cheese

Put it on the grill over medium heat [translate that to a 350 degree oven] and shut the lid for about 15 minutes until everything was hot and melted and full of smokey flavor

Of course you can add the usual Tex-Mex touches of jalapenos, sour cream, salsa or quacamole, but this BBQ version is a nice change up~

BBQ Grilled BBQ Chicken Nachos

Ingredients

  • thin tortilla chips [like Xochitl]
  • cooked chicken chopped or shredded
  • sweet onion slices
  • red pepper slices
  • extra sharp Cheddar cheese grated
  • BBQ sauce

Instructions

  • Line a baking pan with foil and fill with chips. Top with chicken, onion and pepper slices. Drizzle with BBQ sauce. Sprinkle with cheese.
  • Put on grill grate over medium coals and close lid. Check after 10 minutes and continue until nachos are desired doneness. Or bake at 350 in the oven. Servings vary according to amount of ingredients

Even if you don’t have a big spankin’ monster new grill, you can make these in the oven.  I would have never thought of doing something like nachos outside, but remember this when BBQ season comes along, the smokey flavor is a great addition~
