Recipe Box, Pan Fried Kale Ribbons with Sauteed Garlic

You’ve just got to try this, even if you think you don’t like kale, you will be a convert!

Holy Guacamole, this is so good~

The first time I had it was at the Flora Bama Yacht Club, a definite dive bar and diner on the Florida/Alabama state line  [photo source]

Did I mention the kale was only the garnish for the Lobster corn dogs I ordered?

The lobster corn dogs were really more like Lobster Tempura, but I paid no attention to the lobster until every last little precious green morsel was gone

Seriously, it’s that good~

AND so easy to make at home 😋

I used prewashed, chopped kale

You can’t beat it for convenience, but the down side is that all the stems haven’t been removed

Drizzle some quality [extra virgin, cold pressed] olive oil into a large skillet and add freshly minced garlic.  Heat over medium high heat, stirring constantly for 1-2 minutes, until you start to smell the garlic

Add kale and stir. It will wilt down like spinach

If you see any thick stems as you’re cooking, remove them and set them aside to discard

Cut the large pieces down with kitchen scissors as needed, turning them into ribbons

The kale is ready when it starts to darken, softens and then begins to crisp

Panfried Kale Ribbons with Garlic

Ingredients

  • 8 oz chopped kale enough to fill a big salad bowl
  • 4-5 cloves garlic minced
  • olive oil
  • salt and pepper

Instructions

  • Drizzle olive oil over the bottom of a large skillet, about 2 Tablespoons. Add garlic and cook, stirring constantly until fragrant, 1-2 minutes.
  • Add kale and stir. Stir occasionally and add more oil if if looks dry.
  • Remove any large stems as you cook, and snip kale into smaller pieces with scissors if desired.
  • Kale will wilt down and start to darken. Kale is done when it begins to crisp. Salt and pepper to taste.
  • Makes 4 servings

This makes a great accompaniment to just about anything…we had it with some Cheddar & Chive Hushpuppies that will be posting soon  😊

Use fresh loose kale from the produce section if preferred.  Wash thoroughly and remove center stems.  Cut leaves into ribbons
