Holidays, Happy Valentine’s Day Red Velvet Brownies

HH & I  celebrated Valentine’s Day last weekend

He brought me roses, so incredibly sweet…

and I “glammed” them up with some foil heart garland inside the vase and around the blooms

It was mild enough outside for some Valentine crafts

Even CC, not quite 2, had to bring Valentines to her school this week

We will be celebrating HHjr’s Valentine birthday tomorrow [you can see this Valentine table here]

We are also going to have some Mardi Gras fun~

No matter what your plans are you want to be sure to have some treats on hand

These Valentine Cheese Muffins are always a hit

You can always score big with  chocolate caramel covered potato chips and other forms of Man Bait

I decided to make some Red Velvet Brownies from foodfanatic here

You can whip these cheesecake topped brownie treats in no time

There are 2 layers, a thick batter made with cake mix, and a cheesecake topping

Starting from upper left, going clockwise, mix the cake mix with 1 egg, 1 stick melted butter and 1 T water.  Then make the topping by beating the cream cheese, sugar, 1 egg and vanilla.  Spread the thick cake mix batter in a greased 9″ x 13″ pan

Drop the cheesecake topping on in spoonfuls and bake for 10 minutes.  Remove from oven and swirl topping and cake layers with the tip of a sharp knife, lower right.  Return to oven until just set, about 20 minutes.  Do not over bake or brownies will be dry

Red Velvet Cheesecake Brownies

Ingredients

  • 1 box Red Velvet Cake Mix
  • 1/2 cup butter melted
  • 1 egg
  • 1 T boiling water
  • 8 oz cream cheese softened
  • 1/4 cup sugar
  • 1 large egg
  • 1 tsp vanilla extract

Instructions

  • Preheat oven to 350. Grease a 9″ x 13″ baking dish. Combine cake mix with 1 egg, melted butter and water. Beat to mix thoroughly. Dough will be sticky and thick. Press into prepared pan.
  • Beat cream cheese with egg, sugar and vanilla. Drop by spoonfuls onto dough. I used a small cookie scoop. Bake for 10 minutes then remove from oven. Use a knife to swirl cheesecake layer. Return to oven and continue to bake for 25 more minutes or until set.
  • Cool completely before cutting into squares. Keep in refrigerator in an airtight container

Store covered in the refrigerator
