Take-out Tuesday, Cheddar & Chive Hushpuppies for Fat Tuesday

Happy Fat Tuesday!

Mardi Gras, literally translated, is French for Fat Tuesday.  It is also the term commonly used to refer to the balls, parties and parades during entire season of Carnival, the time between Ephiphany and Lent.  Fat Tuesday is the last day before Lent, approximately six weeks before Easter Sunday observed by Catholics and many Christian denominations.   Fat Tuesday is,  by tradition,  the last day to eat rich foods and celebrate, before Ash Wednesday and the season of prayer, self denial, and fasting

We made a weekend of Fat Tuesday celebrations, with Mardi Gras parades and Valentine treats

It was such a chore eating King Cake and Red Velvet Brownies  😊

These Fat Tuesday Hushpuppies are the perfect way to celebrate the end of Mardi Gras season~

They’re the right color too, green and gold~

HH and HHjr declared them the best they’d ever had~

I like hushpuppies, but good ones are hard to find.  More often than not, restaurants serve hard balls of dry dough.  These are sooooo easy to make, and you can customize this recipe any way you like

I adapted my version from The Neeley’s  hushpuppy recipe on the Food Network.    Cheese, a non traditional ingredient in hushpuppies, just might be the key to these moist and light balls

Corn meal, self rising flour, 1 egg, buttermilk, cheese, and onion mix together quickly to form a dough that’s easy to work with

I used a mini scoop  and dropped the puppies into the fryer in small batches

I don’t fry things very often, but a small, easy to clean fryer is a great investment for this type of recipe

In just about 2 minutes you have perfectly cooked, cheesy, chivey, bites!

Cheddar & Chive Hushpuppies

Ingredients

  • 1 cup yellow cornmeal
  • 3/4 cup self rising flour
  • 1 tsp kosher salt
  • 1/2 tsp smoked paprika
  • 1/2 small sweet onion grated
  • 1/4 cup chives or green onion tops chopped
  • 2 oz sharp cheddar cheese grated
  • 1 cup non fat buttermilk
  • 1 egg
  • peanut oil for frying

Instructions

  • Preheat oil in fryer or dutch oven to 350.
  • Mix remaining ingredients in a large bow until well combined.
  • Drop dough by heaping tablespoonfuls into hot oil, in small batches.
  • Fry 2-3 minutes and drain well on paper towels.
  • Salt immediately and serve or keep warm in a 200 degree oven. Makes about 16

Pair them up with some Pan Fried Kale Ribbons, and you will have a tasty little appetizer or side dish!
