Recipe Box, Cauliflower “Steaks” with Beer Cheese Sauce

I satisfied my recent beer and cheese craving with this recipe for cauliflower inspired by Joy the Baker

This recipe is so easy to prepare you won’t need a special occasion

I cut the cauliflower into thick slices, or “steaks”

Some small pieces will crumble off, but just toss them on the pan too

Make sure you spray your foil lined pan with cooking oil spray before adding the cauliflower

Drizzle the cauliflower liberally with olive oil and sprinkle with smoked paprika, salt and pepper

Roast at 425 for 20 minutes, turn cauliflower over and continue to bake for another 20 minutes or until cauliflower is soft and starting to char on the edges

About 15 minutes before cauliflower is done, make the cheese sauce

Stir flour into melted butter to form the roux, then add the milk, beer and mustard.  Cook and stir until thickened

Add cheese and stir until smooth

The specks are from the grainy mustard which gives this sauce a great flavor and tang

Serve in individual shallow bowls to keep the sauce contained

Olé!   💃

This sauce would be a great dipping sauce for pretzels too, when you’re craving something cheesy~

or try this Cheese Fondue Dip

While you’re in the cauliflower mood, this Roasted Cauliflower Gratin tastes like potatoes

Cauliflower Fritters are a tasty treat too~
