Or some Cranberry Walnut Pinwheels made with Gorgonzola Garlic Butter
Or a topping for vegetables
Or zoodles
Or atop a hot fluffy baked potato instead of the usual plain ole butter 😋
Here’s what you do~
Roast a head of garlic in foil with olive oil, salt & pepper at 400 for 1 hour
Squeeze roasted garlic cloves out into a bowl and discard papery skin
Add butter and gorgonzola and mash together with a fork
Refrigerate for 30 minutes
Place butter on a piece of plastic wrap and form into a log
Sprinkle with chopped parsley and wrap up

Gorgonzola Garlic Butter
Ingredients
- 1 large head garlic roasted*
- 1 stick unsalted butter or 1/2 cup, softened
- 4 oz gorgonzola [I used Italian gorgonzola because it’s nice and creamy]
- chopped parsley
Instructions
- Squeeze roasted garlic into a bowl and discard papery skin. Add butter and cheese. Mash together with a fork. Refrigerate for 30 minutes. Place butter mixture on a piece of plastic wrap and form into a log. Roll in parsley and wrap tightly. Refrigerate until use.
