Recipe Box, Papa Doc’s BBQ Smokey Wings

My son and my husband have an obsession for all things BBQ

Here is the newest member to their fleet of  grills, 3 green eggs, 2 gas grills, 1 charcoal grill and now a smoker… notice the pretty cardboard and duck tape covered wheels…heaven forbid they should get scratched!  😱

HHjr christened the smoker by cooking chicken thighs and bacon strips

He coated the bacon with brown sugar and then smoked it.  I know it looks burnt but it was crisp and full of smokey flavor… a perfect manly appetizer

HH, or Papa Doc as he’s known to his grandchildren, is on a cooking journey and he is doing really well

He is enthusiastic and determined, loves to read and study cookbooks, and the other day he decided to make BBQ sauce

I know BBQ sauce varieties could fill a whole grocery store, and there are limitless great commercial ones.  But it is also very easy to make, and I bet you already have everything in your pantry…

He swears he will never buy bottled sauce again.  Try these chicken wings and see what you think

Papa Doc’s BBQ Smokey Wings

Course Appetizer, Cook out, Main Course

Ingredients

  • 1 cups ketchup
  • 1/4 cup cider vinegar
  • 1/4 cup water
  • juice of 1/2 lemon
  • 1 T Worcestershire
  • 2 T molasses
  • 1 T Dijon mustard
  • 1 T chili powder
  • 1 clove garlic minced
  • 1 tsp smoked paprika
  • salt and pepper to taste
  • Tabasco sauce to taste
  • 12-16 chicken wings

Instructions

  • Combine ingredients in a sauce pan and cook over medium low heat. Stir occasionally and simmer for 10-12 minutes to blend the flavors. Strain to remove garlic. Cool to room temperature. Makes about 1 1/2 cups. Use immediately or refrigerate for up to 2 weeks.
  • Separate chicken wings at joint with a sharp knife. Grill over medium hot coals about 20-25 minutes, or until done, basting during the last 10 minutes with sauce.
  • You can also cook these in the oven. Arrange chicken on baking sheets and brush with sauce. Bake at 350, basting occasionally, until done, about 45-60 minutes.
