When you think about all things Irish 🍀 and St. Patrick’s Day,
one of the first foods that comes to mind is the good old PO-TA-TO!
Such a humble vegetable, that has endless possibilities…
You can mash them Slow Cooker Brown Butter Mashed Potatoes
You can fry them Steak House Fries with Garlic and Parsley
You can “scallop” them Slow Cooker Cheddar Scalloped Potatoes
You can “hassleback” them Hassleback Potatoes with Rosemary
You can bake them in a casserole Pantry Potatoes
or make them “Au Gratin” style Sweet & Russet Potato Gratin
You can roast them Perfect Roasted Potatoes
You can even smash them! Smashed Potatoes with Rosemary Salt
You can stuff them for appetizers or a side dish Vegetable Soufflé Stuffed Potatoes
Or a game day snack Loaded Potato Skin Fries
And roll cooked potato into balls and fry them Panko Potato Balls
Or slice them into chips No Guilt Microwave Potato Chips
You can “spiralize” them Light & Crispy Fries
You can “waffle” them Baked Waffle Fries with Sour Cream & Onion

Of course, you can twice bake them!
My daughter made these easy peasy twice baked potatoes. She loves to cook too, but with a career, a soon to be 3 year old, and Baby Boy on the move, she has precious little time
We were so thrilled when she made these potatoes for us recently
I thought they were totally brilliant and worth sharing with you…
Her secret ingredient is creamy salad dressing
You might not always have sour cream or yogurt in your refrigerator, but if you have butter and a bottle of creamy salad dressing you’re all set!
She used bleu cheese dressing, but you can use ranch or creamy Italian
Add some garlic powder, chopped green onion and grated cheese too if you like
Prepare them early in the day and then bake right before serving. You can freeze them after baking too
SALAD DRESSING STUFFED POTATOES
Ingredients
- 1/2 or 1 baking potato per person
- Creamy Bleu Cheese Ranch or Italian Dressing
- 1 T butter per potato
- chopped chives optional
- grated cheese optional
Instructions
- Wash potatoes and prick with a fork. Bake at 425 for 1 hour or until soft throughout. Let cool a few minutes for easier handling. Cut potatoes in 1/2 or cut a small slice off tops.
- Carefully Scoop out the potato from the skin, being careful not to damage the skin. Mash cooked potatoes with butter until melted, and add enough salad dressing to get a creamy consistency. Season potato mixture with salt and pepper, onions, and grated cheese if desired, and mix. Spoon potato mixture back into shells and bake at 350 for 30-45 minutes until heated through.
