Party Panache, Jubilee Crunch

With Summer on the way,  we will be spending a lot of time on the coast with family and friends.  My family has grown up with homemade snack mix on hand, especially for beach weekends and casual parties~

I decided to switch things up a bit and try a new version which I’m calling Jubilee Crunch in honor of the local Jubilee

A jubilee is a naturally occurring event on the Eastern Shore of Mobile Bay in which bottom-dwelling sea life such as flounder, crabs,  and shrimp get caught in low-oxygenated water and swim toward the shoreline, literally beaching themselves on shore

Because the sea life is in a dazed state, it makes them easy picking for jubilee hunters who arrive with buckets, gigs and nets.

This jubilee is full of oyster crackers, goldfish, flounder {Crispix cereal} and cashews {shrimp} tossed in a salty sauce and baked.  It is finished with a sanding of finely grated Parmesan cheese and then is ready for easy picking…

This is similar to the popular ranch oyster cracker snacks, with other crunch factors added

Instead of dill, I used Worchestershire, garlic salt, and Parmesan to kick it up a notch

Jubilee Snack Mix

Servings 16 cups

Ingredients

  • 1 bag 9 oz., oyster crackers
  • 1 bag 6.6 oz cheddar goldfish
  • 6 oz Crispix cereal [corn & rice squares] about 1/2 a box
  • 1 cup cashews
  • 1 tsp garlic salt
  • 1/4 cup Worcestershire
  • 3 T dry ranch salad dressing mix
  • 6 T unsalted butter
  • 2 oz finely grated Parmesan cheese

Instructions

  • Mix crackers, cereal and nuts. Spread out in a rimmed baking sheet. Melt butter and stir in ranch dressing mix and garlic salt. Pour butter mixture over crackers in pan. Stir well to coat pieces. Sprinkle with half of Parmesan and stir again.
  • Bake at 275 for 20 minutes. Remove from oven and stir well. Return to oven for another 20 minutes. Remove from oven and sprinkle with remaining cheese. Stir once more and turn out onto a large arrangement of paper towels. Let cool completely and then store in a large tightly covered container or jars. Makes about 1 gallon of mix
