Recipe Box, Best French Fries Ever

Short and simple today as I am recovering from 4 days of chaos  fun with my children and grandchildren

They had a very good time, with weather stollen from summer…

As usual, there was a lot of cooking going on

And what’s more kid friendly than French fries?

These are the best French fries ever

As in the history of French fries

Maybe even potatoes

And we’ve made a lot of potatoes!

But these are…

All the kudos go to HHjr, he’s the main cook on beach weekends, endless energy in the kitchen

Okay, here’s the secret…

You soak them

and then cook them twice   😵

Totally worth the effort

Best French Fries Ever!

Course Appetizer, Side Dish
Cuisine American

Prep Time 10 minutes
Cook Time 10 minutes
Soak 1 hour

Ingredients

  • Idaho potatoes
  • sea salt
  • peanut oil

Instructions

  • Wash potatoes, and cut into even sticks, skin on. Keeping the size of the fries as uniform as possible will aid in even cooking.
  • Soak potatoes in a bowl of cold water to cover, for a minimum of 1 hour.
  • Pat potatoes completely dry with paper towels.
  • Heat oil to 275-300 and fry potatoes in batches until they have softened but not started to brown or crisp.
  • Drain potatoes.
  • Increase heat to 400.
  • Return partially cooked fries to oil and fry until brown and crisp.
  • Drain again on paper towels and sprinkle immediately with sea salt.

They don’t even need sauce but serve some on the side if you like
