Here’s what I made from the April Bucket List

Bacon & Pimiento Cheese Stuffed Pastries turned into Bacon & Pimiento Cheese Puff Pastry Eggs

 

Strawberry Clementine Salad with Red Wine Vinaigrette from the Cafe Sucre Farine joined

Healthier Fried Chicken for Duke’s Parmesan Chicken Topped Strawberry Balsamic Salad

 

 

Spinach & Pancetta Tart  turned into 3 Greens Flatbread with Prosciutto and Maple Bacon Aioli

 

 

 

Creamy White Sauce Vegetable Enchiladas from A Beautiful Mess turned into Chicken Pot Pie Enchiladas

 

 

Mini Easter Egg Pies turned into Coconut Moussé with Bunny Ear Brittle adapted from Coconut Thins from Lovefoodies

 

 

 

I adapted Coconut Pancakes from She Wears Many Hats into my own version of Coconut Pancakes and served them with coconut cream

 

 

 

We enjoyed everything so much but if I had to pick a favorite it would be Coconut Moussé with Bunny Ear Brittle

The sweet crunchy brittle was such a wonderful contrast to the cool creamy moussé  😋

If you don’t want to bother making the brittle, substitute a crunchy cookie, like Pepperidge Farm Pirouette cookies, or Trader Joe’s Coconut Thins
