Strawberry Clementine Salad with Red Wine Vinaigrette from theĀ Cafe Sucre Farine joined
Healthier Fried Chicken for Duke’s Parmesan Chicken Topped Strawberry Balsamic Salad
Spinach & Pancetta Tart Ā turned into 3 Greens Flatbread with Prosciutto and Maple Bacon Aioli
Creamy White Sauce Vegetable Enchiladas fromĀ A Beautiful MessĀ turned into Chicken Pot Pie Enchiladas

Mini Easter Egg Pies turned into Coconut Moussé with Bunny Ear Brittle adapted from Coconut Thins from Lovefoodies
I adapted Coconut Pancakes fromĀ She Wears Many HatsĀ into my own version of Coconut Pancakes and served them with coconut cream
We enjoyed everything so much but if I had to pick a favorite it would be Coconut MoussƩ with Bunny Ear Brittle
The sweet crunchy brittle was such a wonderful contrast to the cool creamy moussé š
If you don’t want to bother making the brittle, substitute a crunchy cookie, like Pepperidge Farm Pirouette cookies, or Trader Joe’s Coconut Thins
