Happy May!

Here is the list of recipes & ideas I will be drawing inspiration from this month.  You can see photos and recipes of these on the April/May Paint Bucket Pinterest board here

Are you going to cook something Tex-Mex this week for Cinco de Mayo?

I can’t decide what to make!

Need some ideas? You can see all the Mexican favorites from the Painted Apron on Fiesta here

The flavor of the month for May is Lemon 🍋

Crispy Lemon Zucchini Chips with Basil Aioli from Closet Cooking

Mini Bacon, Spinach, Artichoke Challah Bread Puddings from Climbing Grier Mountain

Loaded Pizza Mushroom Caps from Don’t Go Bacon My Heart

Totchos {tater tot nachos}

Carrot Ribbon and Cucumber Salad with Peanut Dressing

Kalac from Pandora’s Box

Lemon Rosemary Roast Potatoes from Just Easy Recipes

Main Dish

Baked Fiesta Ranch Chicken Tacos from Carlsbad Cravings

Lemon Ricotta Lasagna Rolls with Greens and Brown Butter

Sweet & Sour Chicken Burgers with Asian Slaw

Chicken Dorito from Bev Cooks

Lemon Monkey Bread from Six Sister’s Stuff

Impossible Lemon Coconut Pie from Happier than a Pig in Mud

Onion Jam from Culinary Envy

Lemon Zesty Dressing from Mm Good

Here’s what I made from the April Bucket List

Bacon & Pimiento Cheese Stuffed Pastries turned into Bacon & Pimiento Cheese Puff Pastry Eggs

Strawberry Clementine Salad with Red Wine Vinaigrette from the Cafe Sucre Farine joined

Healthier Fried Chicken for Duke’s Parmesan Chicken Topped Strawberry Balsamic Salad

Spinach & Pancetta Tart  turned into 3 Greens Flatbread with Prosciutto and Maple Bacon Aioli

Creamy White Sauce Vegetable Enchiladas from A Beautiful Mess turned into Chicken Pot Pie Enchiladas

Mini Easter Egg Pies turned into Coconut Moussé with Bunny Ear Brittle adapted from Coconut Thins from Lovefoodies

I adapted Coconut Pancakes from She Wears Many Hats into my own version of Coconut Pancakes and served them with coconut cream

We enjoyed everything so much but if I had to pick a favorite it would be Coconut Moussé with Bunny Ear Brittle

The sweet crunchy brittle was such a wonderful contrast to the cool creamy moussé  😋

If you don’t want to bother making the brittle, substitute a crunchy cookie, like Pepperidge Farm Pirouette cookies, or Trader Joe’s Coconut Thins

Thanks for stopping by!  Happy Cooking!
