Recipe Box, Caramel Cheesecake Ice Cream

HHjr gave me an ice cream making attachment for my mixer for Christmas…I think it’s one of those gifts that is really more for him than for me  😂

I either buy ice cream or make the no churn version because I’m lazy  it’s so easy, but I was curious to see if we could taste the difference…

After reading lots of different recipes I chose one from the Kitchen Aid booklet that came with the ice cream making attachment

I chose the Caramel Cheesecake recipe because the prep didn’t require any cooking

Pour the milk into a large container and heat the caramel sauce until it’s loose enough to stir easily

Add vanilla extract, sweetened condensed milk and instant pudding to the milk, stir well and then stir in caramel

I had a half jar of Bourbon Pecan Caramel Sauce and 1/2 jar of Salted Caramel Sauce in the refrigerator, which combined, made the cup of caramel I needed for the ice cream.  You can use any thick caramel sauce you like

You can also stir in a splash of bourbon,  pecan pieces, or sea salt, to a plain caramel if desired

Once the milk mixture is thoroughly chilled, 4-6 hours, pour it into the frozen mixing bowl as the machine is running

I let the machine run for 20 minutes as the recipe stated and then the ice cream was in a soft serve stage

At this point it is best to return the ice cream to a covered container and place it in the freezer for 4-6 hours to firm up

It is quite delicious!

Caramel Cheesecake Ice Cream

Ingredients

  • 3 1/2 cups whole milk
  • 1 can 14 oz sweetened condensed milk
  • 1 package Jello cheesecake pudding mix
  • 1 cup caramel sauce
  • 1 tsp vanilla extract

Instructions

  • Pour milk into a large container or bowl with a pouring spout. Stir in sweetened condensed milk and vanilla.
  • Stir in cheesecake pudding mix and whisk to incorporate.
  • Warm caramel for 30 seconds in the microwave until it has softened enough to easily stir.
  • Pour caramel into milk mixture and stir to combine. Place mixture in the refrigerator for 4-6 hours to thoroughly chill.
  • Follow instructions for churning on your ice cream maker. If using Kitchen Aid attachment, make sure you freeze the mixing bowl for 15 hours before use. Attach bowl and churning blade to mixer, lock in place and set mixer to low speed, #1.
  • As frozen bowl turns carefully pour in the chilled milk mixture. Mix until ice cream is in a soft serve stage, about 20 minutes. Place ice cream into a freezer container and freeze for 4-6 hours before serving.
