It’s officially Summer!

We celebrated the first day of summer with good old BBQ chicken, corn on the cob, Summer Tomato Slab Pie

And fresh raspberry ice cream for dessert!

For Christmas HHjr gave me the ice cream making attachment for my KitchenAid stand mixer

My thoughts immediately went to caramel, chocolate, peanut butter, and other such decadent ice creams…

He has always been a huge lover of berries, and he said, “Can’t you just imagine ice cream this summer with fresh berries…”

I’ll be honest here, I am totally sold on the easy peasy no churn ice creams made with sweetened condensed milk and whipped cream, but I was curious to try making ice cream with this ice cream maker

A lot of ice cream recipes have some tedious steps involved making the base mixture, boiling, simmering, cooling before even getting to the churning part, but I did find a very straightforward berry ice cream recipe from Taste of Home here 

I was able to prepare it in my food processor bowl and pour it directly into the mixer, so it was easy prep and a one bowl clean up

Once the raspberries are pureed with the sugar and vanilla, all you have to do is stir in the creams

Now it’s ready to pour into the prepared ice cream bowl for churning

I am using the KitchenAid Ice Cream Attachment Kit for the Standard Mixer

After about 25 minutes, ice cream magic!

Raspberry Dream Ice Cream

5 minute prep for this dreamy raspberry ice cream

Equipment

  • ice cream maker

Ingredients

  • 2 cups fresh raspberries
  • 1 cup half and half cream
  • 2 cups heavy whipping cream
  • 1 cup sugar
  • 2 tsp vanilla extract

Instructions

  • Puree raspberries in a food processor or blender. Blend in sugar. Stir in creams and vanilla. Follow directions on your ice cream maker to churn*
  • For a KitchenAid stand mixer with ice cream attachment set, put the chilled bowl on the mixer base and attach the mixing pieces. Place mixing head down and turn to the stir setting, or lowest setting. Slowly pour the ice cream mixture into the chilled bowl as it’s turning. Let churn 20-25 minutes until set. Transfer ice cream to a plastic freezer container and freeze for 2 hours before serving. Or serve right away as a soft serve ice cream. Garnish with fresh berries.

You can use strawberries, blackberries, or any combo of berries you like
