Throwback Thursday, Slow Cooker Chicken Parmigiana Sliders

As many of you know, I share a house with my son,

a dedicated single dad and a very busy residential contractor

His 2 boys spend part of the week with us

and every other weekend

They are always with us on Tues, Wed, and often Thurs~

These are busy weeknights this Spring,

Super Boy has baseball practice 2 nights,

Big E has Lacrosse practice 2 nights, plus cub scouts…

all taking place during normal dinner time hours 5-7:30

I help out by doing some of the driving

and making sure dinner is ready when these hungry boys get home

The slow cooker really comes in handy!

This is an embarrassingly easy recipe, and very family friendly

Boneless chicken thighs, Marinara sauce,

minced onion, garlic and Italian seasoning

Pour the sauce over the seasoned chicken,

cover and go about your day

Cook on low for 6-8 hours

The chicken will be very tender,

you can shred it with 2 forks or leave it in pieces

Spread butter and garlic bread seasoning on slider buns and toast

Place chicken on buns and top with shaved Parmesan cheese

You can also serve the chicken on a piece of Texas Toast

Or on top of pasta, like easy Ready Pasta,

all you have to do is microwave it for 1 minute!

This tastes really good after a long busy day~

Slow Cooker Chicken Parmigiana Sliders

Chicken slow cooked in your favorite Marinara sauce then served on toasted garlic slider buns and fresh Parmesan for a simple and very tasty family dinner

Ingredients

  • 6 boneless chicken thighs
  • 1 24 oz. jar prepared Marinara sauce or 3 cups
  • 1-2 tsp minced garlic
  • 1-2 tsp minced onion
  • Italian seasoning
  • 6-8 small buns
  • butter
  • garlic seasoning
  • 4-6 oz. shaved Parmesan

Instructions

  • Spray or line slow cooker. Add chicken and season.
  • Pour sauce over, cover and cook on low for 6-8 hours.
  • Toast buns spread with butter and garlic seasoning.
  • Serve chicken in buns topped with shaved Parmesan cheese.

Notes

You can also serve the chicken on a cooked piece of Texas toast {from the freezer section of your grocery store} or over pasta
