Recipe Box, Grilled Avocados & Avocado Fries

The other night we had chicken fajitas

Simple grilled chicken, sauteed onions and sweet peppers,

tucked into a lightly fried flour tortilla

and drizzled with a little queso…

Paired with a side of grilled avocados, it was a wonderful meal!

These avocados couldn’t be easier to make…

Leave the skin on and cut ripe avocados in half

Remove the pit

Brush the cut sides with olive oil, drizzle with a little lemon juice

and season with salt and pepper

Put them on a medium high heated grill* cut side down

Cook for 4-6 minutes

*You can also cook these stove top in a grill pan

A light, healthy and nutritious side for just about any meal!

Avocados also make great fries!

Not quite as easy or healthy as grilled avocados,

but very delicious and a fun lo-carb change from potato fries!

Avocado slices are dipped in milk, egg, and panko bread crumbs

Then fried to crispy perfection!

Grilled Avocados

This is a great summer side dish you can grill right along side your meat. Avocado halves are brushed with olive oil and lemon, seasoned with salt and pepper and grilled for 4-6 minutes for a tasty, healthy side dish!

Equipment

  • grill or grill pan

Ingredients

  • ripe avocados*
  • olive oil
  • lemon juice
  • salt & pepper

Instructions

  • Cut avocados in half and remove pit. Do not peel
  • Brush cut sides with olive oil and drizzle with lemon
  • Season with salt and pepper
  • Place cut side down on a medium high heated grill {or on a grill pan on the stove top} and cook for 4-6 minutes

*plan on 1 or 2 halves per serving

Avocado Fries

Course Appetizer, Side Dish

Ingredients

  • 1 ripe avocado
  • 1 egg
  • 1 cup panko crumbs
  • 1/2 cup milk
  • salt and pepper
  • peanut oil for frying

Instructions

  • Cut avocado in half. Use knife blade to remove pit by firming slicing into pit only, twisting and lifting out.
  • Carefully peel skin off avocado halves, it should release easily if avocado is ripe.
  • Cut halves into slices, about 6-7 per half.
  • Set up a breading station with small bowls of milk, panko, and beaten egg.
  • Season slices well with salt and pepper.
  • Dip into milk, then panko, then egg, then back in panko.
  • Fry avocado in batches until golden and crisp. Drain on paper towels and sprinkle with salt. Serve immediately or keep warm in a 200 degree oven
